Help me plan my party menu please!

I am having a graduation party 3 weeks from today (holy cow!) for about 35 people. DH and I have talked some about the menu, but I wanted your opinions as well. Here is what we are thinking:

Smoked chicken leg quarters
Grilled salmon (assorted marinades)
Macaroni and cheese
Potato salad
A veggie of some sort (squash casserole?)
Dessert assortment (cake, banana pudding, etc...)

Does that sound ok? Do I need another (non-starch) veggie? Any other opinions? Thanks everyone!

Re: Help me plan my party menu please!

  • sounds like a great menu!  are you doing any apps in the beginning?

I would make the veggie casserole not overly heavy since you have the potato salad and mac n cheese. I have a zucchini, squash and tomato casserole that's layered and baked.

  • Do you know if all of your guests like either salmon or chicken legs? I don't like salmon and don't eat dark meat, so for me, I wouldn't eat either.

Otherwise, maybe add something light, like a garden salad or broccoli salad? Or fresh fruit salad?

  • Those are great ideas! Thanks!

@chrisnjay05212010 May I have that veggie casserole recipe? It sounds amazing!

@ChristyDM82 That is an excellent point about meat and fish. I think I will definitely add broccoli salad and some grilled chicken breasts too. I probably add fruit salad as a dessert too. Thanks again.

  • @GABride2010- i like the idea of a fruit salad!

    Here is the zucchini casserole

    2 medium zucchini, sliced
    1 large onion, thinly sliced
    2 tomatos, sliced
    2 green peppers sliced
    2 Tbsp margarine or butter
    salt and pepper
    Oregano
    Garlic powder
Few slices of American cheese (optional)

Butter shallow baking dish. Arrange 1/2 of zucchini on bottom of pan. Add 1/2 of onion, green pepper and tomato.  Sprinkle with salt, pepper, oregano and garlic powder.  Dot with margarine. Arrange sliced cheese on top. Repeat layers until all used up. Bake at 375º uncovered for half hour.

You can adjust the veggies to your own taste.

  • I agree with adding a salad to add something lighter and some apps.  People like to graze at parties.
  • I agree that adding a salad will round things out. You could also grill up some veggies for those who might not eat chicken or fish.
