Help me plan my party menu please!
I am having a graduation party 3 weeks from today (holy cow!) for about 35 people. DH and I have talked some about the menu, but I wanted your opinions as well. Here is what we are thinking:
Smoked chicken leg quarters
Grilled salmon (assorted marinades)
Macaroni and cheese
Potato salad
A veggie of some sort (squash casserole?)
Dessert assortment (cake, banana pudding, etc...)
Does that sound ok? Do I need another (non-starch) veggie? Any other opinions? Thanks everyone!

I would make the veggie casserole not overly heavy since you have the potato salad and mac n cheese. I have a zucchini, squash and tomato casserole that's layered and baked.
Here is the zucchini casserole
2 medium zucchini, sliced
1 large onion, thinly sliced
2 tomatos, sliced
2 green peppers sliced
2 Tbsp margarine or butter
salt and pepper
Oregano
Garlic powder
Few slices of American cheese (optional)
Butter shallow baking dish. Arrange 1/2 of zucchini on bottom of pan. Add 1/2 of onion, green pepper and tomato. Sprinkle with salt, pepper, oregano and garlic powder. Dot with margarine. Arrange sliced cheese on top. Repeat layers until all used up. Bake at 375º uncovered for half hour.
You can adjust the veggies to your own taste.
