Favorite crock pot recipes?
I finally got my crock pot set up - who has some favorite easy recipes to share? I absolutely hate cooking so the less prep time the better. Or, where do you like to go to look for easy crock post recipes?

We don't use it much anymore since switching to plant based, but I used to LOVE to do "rotisserie" chicken in the crock pot. Basically you take a whole chicken (skinless or with skin if that's your cup of tea) and rub spices all over it. I usually did a mixture of 1/2 to 1 tsp each of paprika, onion powder, garlic powder, italian seasoning, thyme, cayenne, black pepper, sea salt.. etc. I've also used taco seasoning and it was really good. Anyway, spread it all over the bird, esp the breast. If you keep the skin on, try to put some under the skin. Then shove an quartered onion and a few garlic cloves up the birds butt and put it breast down in the crock pot. Do NOT add water or any liquid. Cook on high for 8 hours or low for 4-5. It comes out so juicy and delicious. Definitely my favorite crockpot meal!

T-TTC since Dec 2008. PCOS/nonexistant cycles(anovulation) and endo. HSG in '10 revealed both tubes blocked. Lap surgery in Dec '10 to correct. Failed Clomid/IUI and injectable(Bravelle)/IUI cycles so far.
Chicken Taco's:
Cover chicken breasts with corn and black bean salsa and cook on low for 8 hours. When you get home, shred the chicken and serve on taco shells with your favorite toppins.

Chicken breast
1 bottle of Franks Hot sauce
Pour bottle over chicken breast and cook for 6-8 hours. Shred. I like to serve it on toasted buns with blue cheese and mozarella cheese.

How to find recipes:
I added some of my favorite recipes, all pretty easy even if they seem a little long winded.
I sometimes do a Google search for crock pot recipes though I do have a few cook books devoted to crock pot recipes. Not Your Mother's Slow Cooker Recipes for Two by Beth Hensperger had a good variety of recipes for smaller meals. Also there is a blogger that did a year of crock pot cooking that is a good resource for recipes and I think most, if not all, were gluten free. She has added more recipes since that year of course. http://crockpot365.blogspot.com/
I love making turkey breast in the crock pot as its extremely easy and comes out moist (it seriously falls off the bones, just a warning haha). I typically use this recipe http://www.southernplate.com/2013/10/slow-cooker-Turkey-breast-my-little-Thanksgiving.html
I have a 5 quart crock pot that I can fit a 6.5 lb turkey breast in.
I also love the crock pot chili recipe out of the Betty Crocker cookbook though I do add stuff to it
2 lb lean ground beef (at least 80%)
1 large chopped onion (1 cup)
2 cloves garlic, finely chopped
1 28 oz can diced tomatoes, undrained
1 15 oz can tomato sauce
2 T chili powder
1.5 tsp ground cumin
1/2 tsp salt
1/2 tap pepper
1 15 or 16 oz kidney or Pinto beans, drained and rinsed (I add two cans one light red and one dark red kidney beans)
* I also add about a cup of frozen corn
Cook the beef in a skillet the drain
Put all ingredients in a 3.5 to 6 qt crock pot (again I use my 5 qt for this so if your crock pot is in the 3.5 range then I'd probably see how full it was before adding the extra can of beans)
Cook 6-8 hours low or 3-4 on high
It does make a lot but freezes really well.
Another recipe I like is Peppery Pork Sandwiches from Better Homes & Garden So - easy Slow Cooker book. Its a different take on pulled pork without barbecue sauce.
1 large onion
1 4 oz can diced green chile peppers, undrained (I have used canned jalapeño to make it spicier)
2-2.5 lbs boneless pork shoulder roast
1 T hot paprika (regular is fine as I've never found the hot paprika in the stores here, if you find it I'd probably go with the green chile peppers called for in the original recipe)
2 14.5 oz cans diced tomatoes, undrained
2 tsp dried oregano
1/2 - 1 tsp ground black pepper
1/4 tsp salt
8-9 French style rolls, split & toasted
Cut onion lengthwise into quarter & thinly slice quarters. Then arrange slices on bottom of 4-5 qt crock pot.
Trim fat from meat and sprinkle with paprika. Place meat on top of onion.
In medium bowl, combine undrained tomatoes, chile peppers, oregano, black pepper, and salt. Then pour over meat in cooker.
Cook 10-12 hours low or 5-6 high.
Transfer meat to cutting board (or a serving bowl works too) and shred.
Use a slotted spoon remove tomatoes and onion and add to meat. Use cooking liquid to moisten mixture.
Serve on rolls though would taste good over rice.

I love the Carnitas, Asian Pork and with Mushrooms, Sesame Honey Chicken, French Dip Subs (I actually just make the meat only, skip the onions and peppers, and serve a pot roast with mashed potatoes. It is so good!)

I recently made this whole roasted chicken in my crockpot from Budget Bytes.

It was really good! I used the liquid in the crockpot to make gravy and served the chicken with mashed potatoes and gravy and roasted carrots. The only thing I did differently than the original recipes is that I didn't put it under the broiler...but that was just because my broiler was too short to fit the chicken.
This recipe was also great because we got multiple different meals out of it. The next day we had chicken sandwichs for lunch and then I used the remaining chicken the next night to make chicken vegetable soup.
Currently on Metformin and Synthroid
