Trying to meet multiple needs

Hi all,

This is my first time posting to this board. I am 29, married and we both work full time.

I am planning to have a little get together with some co-worker's from work. I was looking for menu advice.  I need to accommodate ten people, one of which has diabetes, one of which is doing paleo, one gluten-free person, and one soy-free person. I would like to make sure all the food is edible. I was thinking of the following:

Spaghetti Squash with gluten free meat balls

salad

veggies

bean dip

corn chips/rice crackers

cheese

gluten free chocolate chip cookies

Any input would be helpful. Thanks!

Re: Trying to meet multiple needs

  • In my experience, I've found that people with dietary restrictions are pretty good about "picking around" things they can't eat. The obviously exception would be those with food allergies. Could you make your get together a potluck to make the meal prep a little easier for you? What about doing kabobs or a taco bar? Your guests can pick the ingredients appropriate to their diet and take some of the pressure off of you.

Your menu sounds good though -- careful with the cookies with a diabetic. Maybe a fruit parfait instead?

If you are looking for a yummy salad option, try this one!
