We moved into our current home about two years ago. The previous owners had installed light fixtures that looked like they belong above a mirror or vanity, but instead they were installed on the ceiling (IN ALL THREE BATHROOMS :-/ ). We are planning to move next summer and don't want to spend a lot on new lighting and re-wiring. Any suggestions on how to update?

Lowes or Home Depot sell glass light "shades" that can sometimes be added to these types of lights. Typically, their online selections are larger than the ones in-store.
A fixture with 4+ bulbs provides great task lighting in a bathroom, so whatever you do, I would not remove the number of bulbs and go toward fewer lights in the fixture.
Try www.lightingdirect.com or www.lampsplus.com for online lighting stores that often have less pricey options.
