NBR: Favorite Summer Recipes

My favorite recipes tend to be a bit heavy and more suited to Fall and Winter. I do love this Cilantro Lime Shrimp. What are some of your favorite recipes to bring out during the Summer months?

  • I love making watermelon salad. I don't have a recipe, really, but I cmobine watermelon, thinly sliced red onions, and chopped mint, sprinkle on feta, and make a quick vinaigrette with fresh lemon juice, olive oil, and salt and pepper. It's SO yummy!

  • A lot of the things I make are paleo because I can't have gluten or soy and Paleo eliminates both. 

    Maple Mustard Chicken on the grill or stovetop that I usually pair with a summer Veggie Tian

    Enchilada Chicken stew in the crockpot.  I break out the crockpot a lot in the summer.

    Philly Cheesesteak Stuffed Peppers   I made it just last night actually. 

    Kabobs on the grill is something we have probably every other week in the summer.

    I make macaroni salad (made with rice noodle macaroni and canola oil mayo since most mayo is made with soy) for any summer cookout gathering.  I don't have a recipe for that.  I wing it. 

    I also make chicken salad a lot during the summer.  I prefer the fruity kind over the savory, so I throw sliced green apples, green grapes, pecan or walnuts, diced celery, and shredded chicken together and then mix with onion powder, garlic powder, salt, pepper, and a little bit of mayo to taste. 

    If I do a hot pasta dish, I lighten it up and use veggie pastas instead of rice pasta.  Zoodles are great for that.

  • I grilled these marinated mushroom skewers last night as a side and they were delicious! The marinade would be just as good on whole portobellos and would probably be good on chicken too, I'm a vegetarian so I didnt try that. We had it on them on the side of a grilled margherita pizza and in Caprese salads for lunch today.

  • This is my favorite summer salad recipe, only I use regular ranch, not the Southwest, and I saute the onions first.

  • I love anything grilled (especially vegetables like eggplant, squash, cucumbers and peppers).  

    I also love to grill peaches (first I dip them in melted butter and roll them in brown sugar), and then serve them drizzled with honey and mascarpone cheese.

    And nothing beats a nice fresh salad on a hot summer night for dinner.

    We love to grill squash & zucchini, but I never thought about cucumbers or peaches. I'll have to try that. Thanks!

  • I had this salad last night and it was excellent.  Turns out I didn't have any apple cider vinegar, so I used red wine vinegar and it was still delicious.

  • I know it has been mentioned, but I love a Caprese with freshly made mozzarella (store bought), garden tomatoes, garden basil, a drizzle of olive oil & balsamic vinegar, and sprinkle of salt & pepper. Yum! 
    Fish tacos are pretty tasty, too. Marinate the fish in lime juice, red pepper flakes, olive oil, and salt & pepper and grill. So good with margaritas or limeade.

    Last Friday, I had one at my mani/pedi appointment, so I say yes. Never to early for a margarita. They were running a special where they used lime & coconut scrub and it included the drink. Who am I to turn that down?

  • Grilled pizza! Roll out the dough and throw it on the grill until it's set and browned on one side, flip, add all your toppings and close the cover until the cheese is melted. I like to make them personal-sized because they're easier to flip. And they only take about 5 minutes. So easy!

  • We make the watermelon salad @caseyandlizzie mentioned a lot.  We also make onion, tomato, cucumber, and goat cheese salad with the Marzetti dressing as sides.  For main dishes, it's a lot of grilling.  I want to get more into grilling what we haven't done before like the peaches or making pizza on the grill.

    I pretty much like to make anything on the grill.  We started doing grilled salads last year actually grilling the lettuce and it was really good.
