Gluten Free...

Hello All,

I just found out my niece is allergic to gluten and I was wondering if anyone has a favorite recipe or blog they have/follow/write? Need to do some testing before family get togethers.

Also, how do you do get togethers? Do you make everything gluten free? Do you make something special for the ones allergic?

  • I dont have any blogs that i follow but i do have some experience- my mom and brother have celiac's disease. 

    For get togethers- it depends on what i'm making.  Lets say i'm making a pasta salad. I will do one GF and one regular.  GF pasta is expensive and not everyone enjoys the taste.  If I'm making roasted potatoes or a steak with a marinade, i will go ahead and make sure those are GF.  If you are having dips- you could go either way- you could put a spoon in it and ask that no one dip anything in it and that they spoon the dip onto their plates or you could make two bowls- one dippable and one with a GF sign so that ONLY GF snacks get dipped into it.  I would really judge how you handle it based on the crowd you have- not everyone is knowledgable on the GF issues.

  • I'd recommend heartland pasta.  Also, we bake a lot at home- the things on the market are questionable.  There are good things, but you really have to do your research and be willing to throw away a lot of stuff.  

    As far as baking, I hate rice flour.  I think it tastes grainy.  If you really want to use the typical GF flours, I recommend using an oil based cake recipe- it takes away the grainy taste.  I'm all about GF oat flour.  It has a normal consistency.  Brownies work well because you don't have to add any extra binder.  Any other baked goods I'd recommending using xanthum gum.

    If she was coming over, I would just avoid the issue for a while.  Serve some type of meat, potato, and vegetable and ice cream for dessert.  If she hasn't already been told, most doctors recommend that you stay away from grains for a while anyway to let the body heal and to avoid creating sensitivities to anything other grain.

  • We have some friends who are GF. If it's a smaller gathering, I'll usually just make sure whatever I'm making for dinner is GF. I'll usually do some sort of potato or rice for the side, plus protein and a veggie. I make risotto a lot because it's versatile and takes care of my brother who's a vegetarian. 

    If it's a bigger get together I just try and make sure they have options, and let them know what they are. 

    These friends say it's easier to buy GF now. There are a lot more products and they've improved a lot! GL!

  • Figure out how specific she is.  Most people with a sensitivity only can have things with that were processed with in or near gluten as long an ingredient doesn't contain gluten.  Does she have celiac?
