Weekly Dinner Menu 7/27/14

We're going to be gone Tuesday-Friday on vacation!  YAY!  I'm soooooooo excited.  I haven't had time off since Christmas and I'm ready to decompress! 

Sunday: Grilled pesto shrimp
Monday: Leftover Tuscan sausage soup
Tuesday-Friday: vacation
Saturday: I have 10 people over for lunch.  I'm making tuna deviled eggs; salad with apples, pecans, dried cherries, and maple dijon vinaigrette; mushroom and scallion frittata.  Plus I'm making an apricot sour punch.  I'm excited about that, but I probably won't be cooking that night for dinner.  Hubby will have to take care of that.

    Pathetic, but it's a plan:

    Mon- out to Bob Evans
    Tues- One pot zucchini pasta  (I'm omitting the mushrooms) 
    Wed- Pierogies with caramelized onions (done in the slowcooker)
    Thurs- Slowcooker French onion soup w/a turkey sandwich for H
    Fri- cheese, crackers, grapes, apple slices, carrots
    Sat- Frozen pizza

    Wed- Pasta with homemade pesto sauce
    Thurs- Crunchy Onion Chicken with sesame noodles and carrots or edamame
    Fri- i usually hit the grocery store after work and pick up something quick to give myself the night off :)

  • @chrisnjay05212010, thank you! I actually have a horrible cold on top of being pregnant! Ugh. I'm really hoping once I hit second trimester, I have more energy to cook. Plus, I want to make a bunch of freezer meals for after baby, so I'm going to have a lot to cook!

    I hope you feel better!  I'm terrified of being pregnant.  Women in my family are notoriously ill during all 9 months months.  Cooking before baby sounds like a great plan, so I hope you're well enough to do it.

    Monday -We ate Japanese out
    Tuesday -Making Mac n cheese with goat cheese and cheddar
    Wednesday -Chinese Stir Fry with noodles
    Thursday -Halibut (not sure how I'm going to prepare it yet!)
    Friday -Cube steak with green beans and red potatoes

    I can't wait to be pregnant!! I have had baby fever for 3.5 years now, and I can't wait to start TTC. DH hasn't been ready (not sure if he is now or not), but we will still wait close to another 6-12 months before TTC...so the wait continues!

    @GABride2010- do you have a recipe for the cube steak?  I'm always interested to pick it up at the store for a change but dont know what to do with it.

    Sorry I was misleading! Just the caramelized onions are done in the slowcooker! Sorry to disappoint.

  • @ChristyDM82 No worries! Those onions look amazing. I can't wait to try this recipe out!

    @chrisnjay05212010 I don't have a recipe exactly...We dredge our cube steak in seasoned flour (salt, pepper, garlic) and pan fry it until it is done. We eat it with mushroom brown gravy, but you could also use a white gravy if you like. We also have some kind of veggie and starch with it.
