Weekly Dinner Menu 8/17/14

I'm back to cooking.  Still not feeling well, but I can't handle anymore take out or frozen meals or the few things H can make well.

This week we'll be having a salad of leek, tomatoes, cucumber, basil, balsamic vinegar, and olive oil.  My clients have given me a whole lot of tomatoes and cucumbers, so we need to eat them.

Lemon chicken with garlic mashed potatoes
Monterey Chicken with parmesan potatoes
Left over Thai food
Then up to the lakes to a friend's house for the weekend.

  • here's my list!  Not even sure what we are having tonight since i'll be getting home late from a drs appt. It will either be a pasta or quiche since i didn't take any meat out to defrost.

    Quiche Lorraine
    Cappellini Pomodoro
    Ranch Chicken, side TBD
    London Broil with roasted potatoes and broccoli
    Spinach Tomato Tortellini
    Spaghetti with Meatballs
    Cruncy Onion Chicken with sesame noodles
    Tacos
    Tilapia with orzo/tomato salad

  • We were at my brother's wedding all weekend so I haven't even been grocery shopping yet! I do know that I have plans Tuesday & Wednesday and am away this weekend, so I'll only be cooking tonight and Thursday. Probably baked ziti and pork tenderloin so H has leftovers.

  • Sunday (last night): Homemade pepperoni and mushroom pizza
    Tonight: Breakfast (eggs, link sausage, and biscuits and gravy)
    Tomorrow: Teriyaki chicken thighs with steamed sugar snap peas and salad
    Wednesday: Cube steak (with mushrooms and gravy) with sour cream and chive mashed potatoes and steamed broccoli and carrots 
    Thursday: Teriyaki Chicken Fried Rice (made with leftover chicken from Tuesday)
    Friday: Boca chicken sandwiches with yellow rice and salad
    Saturday: Halibut (not sure how we are going to prepare this yet...I need to find a recipe!)
