Weekly DInner Menu 8/31/14

I have a long list with some carryovers from last week, we didnt seem to go through all the meals. My DH worked late alot so i ate easy meals or leftovers because i wasn't in the mood for cooking for myself.

Tacos ( most likely having tonight)
Breaded tilapia with orzo tomato salad
Ranch chicken, sides TBD

Balsamic chicken over white rice with veggies
Tortellini Bake
John Wayne Casserole
Baked Pesto Chicken, sides TBD
Crispy Cheddar chicken with mac n cheese
Italian Chicken bake with potatoes and green beans

GEOG

It's Orientation Week at the university so that means total chaos when it comes to food preparation!

Saturday - Chicken strips with corn-on-the-cob

Sunday - Homemade pizza

Monday - Pork tenderloin with brussels sprouts and bread

Tuesday - Spaghetti squash with red pepper sauce and sausage

Wednesday - Dinner on campus

Thursday - Dinner on campus

Friday - Dinner on campus

Monday: Chicken taquitos and guacamole

Tuesday: Chicken salad

Wednesday: Roasted chicken thighs with tomatoes and mushrooms over polenta with salad

Thursday: Leftovers 

Friday: Maple glazed salmon with garlic roasted potatoes and sautéed spinach

DH and I are of town until Saturday night, so we have no planned meals this week. We are visiting family in Kentucky, and I have a job interview in Michigan on Thursday!

We were away until last night, and I just picked up a rotisserie chicken from the grocery store for dinner. The rest of the week will be the following in no particular order:

swordfish w/ couscous

chicken tacos

pork tenderloin w/ rice

spaghetti bolognese

Sunday: Risotto with pesto and peas was the plan, but we were tired from visiting family most of the day so we ended up having chicken nuggets and tater tots from the freezer 

Monday: Cheddar cheeseburgers with caramelized shallots and oven fries

Tuesday: Grilled BBQ chicken quesadillas

Wednesday: leftovers (DH will be on an overnight business trip)

Thursday: Jalapeno popper pizza

Friday - Sunday: We're going to be out of town. Going to the Alabama football game in Tuscaloosa, AL!

@chrisnjay05212010‌ I think my H would like that! I hate bell peppers, but don't mind them in salsa. Do you think I could substitute a drained jar of salsa for the peppers/onions/tomatoes/jalapenos?

I bet you could!! I havent tried to make it yet but i think it would be a nice twist!

I'm making it too because i think DH would like it.  I generally dont eat peppers either so I just pick them out, LOL
