Crock Pot cooking for 2 - Help!

My fiance and I are in a living situation (for 6 - 8 months) that limits our cooking vessels to the microwave and a crock pot. I'm determined to eat healthily as I am trying to lose weight. Aside from Pinterest, does anyone have suggestions for healthy crock pot for 2 cooking resources? Thanks!

  • It is just the two of us as well, so I'm looking forward to hearing other recipes.

    I have a small crockpot (2 qt maybe??), and it perfectly fits a fryer chicken (4-5 lbs). I rub the chicken with olive oil, and then I rub on my seasonings: garlic, salt, pepper, and Italian seasoning. Don't add any water or liquid! Cook on low for 8 hours or high for 4. I usually serve it with a green veggie and yellow rice.

  • Ditto to the chicken- ive done it and will never bother doing a roast chicken in the oven again!  The meat just falls off the bones so there is no carving and its delicious!

    I do a shredded chicken taco in the crockpot.  You can serve like tacos, eat over rice or even with salad.

    4 chicken breasts
    1 packet taco seasoning
    1 can corn
    1 can diced tomatoes
    1 can black beans

    Dump all ingredients including juices in cans into the crockpot. Cook on low 8 hours.  Shred chicken and mix together. Then serve as you like.

  • I really like Skinnytaste for healthy recipes. They're not necessarily for two, but you could cut the recipe if you had to or freeze it for later use. 

    In the summer especially, I like to make a big batch of simple shredded meat (chicken, beef, pork) and then either use it over the course of a week or freeze some. Here's a good batch of recipes for shredded beef 3 ways. I don't follow this taco recipe, but use my own seasonings.

  • I saw this blog post and thought I'd share it.


    Not necessarily recipes for 2 people, but I like Cooking Light recipes and find they keep well for lunches or leftovers later. 
  • I just read The Complete Cookbook for Two and it has a whole section in it for the slow cooker. It had some pretty great ideas that I will be trying.  It also had a full section on dinner salads, so if you don't have a stove-top that's also a great healthy option! Good luck!
  • I love to make ribs in the crock pot (super easy, just put the fatty part against the wall, add your seasoning and a bit of bbq sauce and you're good to go). I also like to make chicken, pork loin (mmm I make some fantastic pulled pork and slaw tacos if you'd like the recipe), beef. You can make soup and all sorts of things. If you have extra you can always put it in the fridge for lunch the next day. I love making salads with left over meat. It's healthy and doesn't go to waste. 
  • I have couple easy chicken recipes I like (we usually use leftovers for lunches)..

    Salsa Chicken Tacos:
    Chicken breasts (I use whatever will fit in the bottom of the crock pot)
    1- 16 oz jar of salsa
    1 packet of taco seasoning

    Dump salsa and seasoning over chicken breasts and turn on low for about 3-4 hours. Remove chicken and shred.


    BBQ Shredded Chicken
    Chicken breasts (again, whatever fits in the bottom of the crock pot)
    1- 16 oz bottle of your favorite BBQ sauce
    Season to taste (I usually just add some crushed red pepper)
     
    Dump BBQ sauce and seasoning over chicken breasts and turn on low for about 3-4 hours. Remove chicken and shred, serve on buns with BBQ sauce.


    PS. You can put frozen chicken directly into the crock pot, I'd let it cook the full 4 hours though.  :)
  • Check out Hungry Girl. Lots of great healthy receipes & she has some crock pot cooking. The thing I love about her cookbooks is that the receipe portions are generally 1-2 servings. Also check out organize yourself skinny. Lots of great receipes to freeze & then heat
