  • Ok, I love anything that involves roasting. #roastingismyfavorite

    But, if I had to pick a recipe though it would probably be Coq au Vin. Chicken marinated in wine, fried in bacon fat and then cooked in more wine. And don't forget about the onions and the garlic! 

    Add crusty bread and more wine and this is probably my favorite dish for when company comes over.

  • By the end of summer, I'm pretty done with grilled items and I'm looking to make anything that roasts in the oven a long time.  I'm also a big fan of Coq au Vin or Beef Bourguignon for French dishes.  I love making some tzimmes or any other brisket recipe (easiest is roasting brisket with 2 onion soup soup packets and a jar of marinara sauce and it's soooooo good).  Basically I want to make all those things I didn't make all summer because it heated up the house too much.
  • DH and I love to make chili in the fall (actually fall and winter, because fall only exists for a week or two down here!). I haven't really roasted any meat yet, but I have made many dishes in my slow cooker. I want to use my slow cooker more, and learn how to make a roast!

    @BlueBirdMB I have been wanting to make Boeuf Bourguignon for a while now, but all of the recipes I have found look so intimidating. Do you have a tried and true recipe and/or any tips for a BB virgin?

    The only recipe is Julia Childs.  I tell you it's the ONLY one.  It's a super long process, but not difficult.  Just go for it!  And if you mess up a little, just throw it in the pot when it simmers for the 4 hours and it will all work out.  Also, she says a "side" of bacon- yeah I buy pre sliced bacon and use that and it all works fine.

  • Exactly @DZKathryn. I've been trying to work up the courage, and it hasn't worked so far :( One day I will make it, but I'm worried that it will not turn out right. That is my fear for trying to make anything new. If it doesn't taste good, then I will have wasted all of that time and money...sigh.

  • You can't screw it up too badly if you just add the ingredients.  All that wine (I think it's 2 full bottles) will cover up the mistakes ;)
  • Wow, that's a lot of wine. Do you have any suggestions on a specific wine to use for this recipe? I'm just starting to get into red wine, so I don't know a whole lot about the good vs bad ones!

  • I don't remember.... in the Julia Child recipe they specify, but I've never noticed a difference when cooking with wines.  Maybe I don't have a sensitive enough palate?

  • Without question, my favorite is chili.  It is best when it can simmer all day long.  I just wait for a cold day to get a chance to make it.  In Michigan, it is hard to know if that day is going to happen in August or October!  :)

  • I love soup in the Fall. I've tried so many different chilis over the years and feel I finally perfected it! I also have a couple old family recipes that I love. One is guiso (a cuban corn stew) and the other is a split pea soup. There's something so comforting about soup on chilly evenings. 
  • I love soup in the fall/winter too!  I have a really yummy butternut squash pear soup recipe and a potato soup one that i make constantly in the winter!

    I want to love chili so bad but i'm not a huge fan! I think its the beans and im not the biggest fan of chop meat either.....I recently stumbled on a no bean chili recipe that im looking forward to trying!

    You can do a no bean chili with steak instead of ground beef! I bet it would be super delicious.

  • @chrisnjay05212010‌...I hate beans of all kinds and varieties (except green beans). DH puts 4-5 cans of beans in his chili, and it tastes great, but it would be absolutely amazing if he didn't put beans in it. I don't mind the texture, but the flavor is disgusting!

    @futuremrsba‌ DH's family eats French toast with their split pea soup. It sounds really gross, but they say it takes the pea-ness out of the soup. I have never tried it because most all peas fall in the same category as beans (see above)!

  • @chrisnjay05212010 DH always says I'm strange because I hate all beans (except green beans and most peas. I've only met one other person IRL who feels the same way. You make three of us! I try them every once in a while to see if I will magically start to like them...that hasn't happened yet. I also think that refried beans smell like canned dog food, and I don't see how people eat them!

  • @GABride2010- i recently started to love Edamame! Is that even a bean?   Refried beans if its baked into somthing i can tolerate, like a dip or a taco bake, i wont eat it in large bites but i can work with it.   I do agree they smell like dog food!

    Edamame is/are soybeans. I love edamame as well, so I guess that makes two kinds of beans that I like. DH and I make a layered Mexican dip that has refried beans in it (see recipe below). I can tolerate the beans in that, as long as the other layers of the dip are larger than the refried beans. I would rather put a layer of chips or more meat or something on the bottom besides beans, but DH likes the beans. 

    Recipe:
    In a 9x13 dish, spread 1 can refried beans in the bottom of the dish, layer guacamole on top of the beans, brown meat and add taco seasoning and add that on top of the guacamole, add a layer of sour cream on top of that, lastly, add a layer of cheese. Bake at 350 until bubbly (about an hour or so). You can add other ingredients in between the sour cream and cheese, such as olives, lettuce, salsa, etc...

  • My favorite fall dessert recipes include apple vanilla bean cinnamon muffins (a good recipe to try out is here at http://www.KaysBudgetRecipes.net), as well as anything with pumpkin.  For main dishes I do like slow cooker Guinness corned beef, stews, and wonton soup.
