I need salad suggestions
Jackson's school participates in Grow Pittsburgh's garden classrooms, and as part of that all students in the school get a semester of gardening lessons.
Thursday the school is hosting its annual harvest dinner as part of the experience. The older grades harvest vegetables and make salads and soups with them.
All the families in the school are invited, and each family is assigned either a soup or a salad.
With 200 families in the school, even if only half attend, that's a lot of salads.
I want to do something fall oriented, and don't want to bring another typical green salad.
Anyone have any suggestions for a fun salad to take to the dinner?

If you wanted something a little different, how about some kind of apple dessert salad? I feel like there were a ton of recipes on pinterest last fall
