Weekly Dinner Menu 10/19/14

I'm back on track after having a crazy few weeks.  Here's my list over the next two weeks

Tonight- Lamb chops on the grill with cous cous
Sunday- Butternut Squash and Pear soup

In no order:
No bean chili with cornbread
German Pot Roast with carrots and mashed potatoes
Kielbasa & Pierogies
Creamy Chicken Bake, side tbd
Chicken Parm over spaghetti
Lentil Pasta
Tacos

  • Tonight: I'm OOT, so DH is on his own
    Tomorrow: Weekly Sunday dinner with friends...not sure what's on the menu yet
    Monday: Venison enchiladas with Mexican rice
    Tuesday: Some sort of soup in the crockpot -any suggestions??
    Wednesday: Butter beans (taking them to Wed night Church supper)
    Thursday: Pan Seared Halibut with green beans and roasted red potatoes
    Friday: Braised chicken thighs with mushroom rice

    @chrisnjay05212010 I wish DH liked lamb. We eat all kinds of wild game, but he says lamb tastes very gamey. We had it at a nice Greek restaurant in Atlanta the night we got engaged! I am encouraging him to try it again, but I don't think he will.

    Sun- Slowcooker chicken and rice soup with bread

    Mon- Quinoa enchilada bake
    Tues- Spinach lasagna wonton cups
    Wed- Stromboli with turkey pepperoni and hot peppers
    Thurs- Broccoli cheese quiche with hashbrowns
    Fri- Chicken parmesan with veggies
    Sat- Sesame noodles

  • @GABride2010- typically my DH is not a fan but for some reason he enjoys the little lamb chops, im not sure if its b/c its such a small amount of meat that you cook them more rare so they are still tender.   He hates regular gyros!   They are also very pricey so i ONLY buy them when i see them on mark down.  Our grocery store will mark down meat on Fridays to sell it so if i see it on sale i usually grab it and then make it right away.  Its far and few between so that might break it up for him.

  • You should!!  I marinate them for an hour or so, depends how much time i have.  Here is the marinade

    1/4c vinegar
    2tsp salt
    1/2 tsp pepper
    1 Tbsp garlic minced or 1 tsp garlic powder
    2 T olive oil
    Chopped dried onions

    Mix ingredients together and add chops.  I had about 11 chops.  Marinate for a bit.  Grill 3 mins per side.

    Last night my grill ran out of gas.  So i pan fried them in 2 Tbsp olive oil for 2-3 mins a side and then put them in the oven at 400º for 5 mins.  They came out just as good!

    ^ That sounds great!  I'll have to try that- I love lamb chops.

    Monday: Leftover casserole
    Thursday: Leftover balsamic chicken
    Friday: Leftover pork roast
    Saturday: Busiest day ever, so probably take out
    Then VACATION WEEK!  We're NOT cooking, period.  lol

  • Tonight we're having mac and cheese with broccoli and sun dried tomatoes. DH will be on a business trip all week so I'll be eating through those leftovers and some chicken soup from last week.
  • My DH is also not a fan of lamb! must be a conspiracy or something :)

    Sunday - Fish with wild rice and salad
    Monday - Soup from the freezer (we have so many!) and bread
    Wednesday - Stir fry
    Thursday - Out
    Friday - Out
    Saturday - Lasagna

  • We have the whole week off.  4 days up in Quebec City, then home.  I have a meeting in Boston, but it's brief and hubby and I will hang out in the city the rest of the day.  Then it's Halloween and we're actually going to a party (we haven't participated in Halloween in years!).  I. Can't. Wait.

  • I LOVE Quebec City! It's such an amazing place. The Old Town is so hilly I justify eating everything in sight since you get such a workout walking around. Enjoy your time off @BlueBirdMB
  • Hey @GABride2010, we currently have these soups in our freezer:

    Acorn Squash Soup (delicious! We made it for a crowd and everyone was raving about it)
    Southwestern Sweet Potato Soup (It's got a nice little kick to it)
    Curried Chicken and Rice (I good one, it's interesting that they puree the rice, I had never seen that before)

  • @GEOG I 100% agree- eating is totally justified because of the walking!  I've been there before, but H hasn't and he's in for treat!  I've already planned out our eating adventures lol
