Re: Weekly Dinner Menu 11/2/14
I would LOVE your no bean chili recipe!
We are having Beef and Broccoli, Tacos, Chicken Potatoes and greenbeans, Chicken and rice, and Stuffed green peppers. Most of these are new recipes for us. We also eat with family once a week and have a "fend for yourself" type of night.
Wife to J since 2005, Mommy to T (10/08), L (08/10) and C (02/13).
Last Night: calzones (DH made pepperoni/mushroom, and mine was caramelized onion, mushroom, and goat cheese - so good!)
Tonight -crab pasta with a creamy wine sauce
Tomorrow -something quick like sandwiches or hot dogs
Thursday -chicken fried rice
Friday -I have a professional dinner, and DH will likely have chili
Saturday -girls sushi night out! DH will fend for himself
Sunday -weekly dinner with friends (soup night -I'm making a few loaves of bread)
@LJM0521 here is the recipe!
No Bean Chili
1 lb ground beef
2-3 cloves garlic, minced
1 large onion, chopped
1 Tbsp red pepper flakes (i did more like a tsp as i'm not a huge spice lover)
Salt and pepper to taste
1 Tbsp dried oregano
2 Tbsp chili powder
2 Tbsp hot sauce (Franks or whatever you have) i also did alittle less than 2 tbsp)
1 can (28oz) crushed tomatoes
1 can diced tomatoes, including juices
1/4 cup red wine vinegar
First Brown the meat in a large pot or dutch oven. Add onion and garlic when meat is almost cooked through. Add red pepper flakes, salt, pepper, chili powder, oregano and hot sauce, stir to coat evenly. Add crushed tomato and diced tomatoes (with the juices) and vinegar. Stir to combine. Bring to a boil and then simmer at least 20 mins or longer, if you have time to spare.
I served mine with sour cream and cheese on top and had chips and corn bread for dipping.
