What are you baking for the Holidays?
I always make carrot cake cupcakes with cream cheese/coconut frosting, and sugar cookies. Can't wait!
Re: What are you baking for the Holidays?
@HoneyBee973 Would you mind sharing your sugar cookie recipe? I have yet to find a really amazing one. Thanks!
Thumb cookies (these have the jam in the center)
Spritz cookies
Tea cookies (which is like a sugar/shortbread)
Butternut Balls (some people call these snowballs)
Peanut Butter Fudge (GF)
Peppermint patties (GF)
ETA: Spritz cookies sound amazing, and it will give me a chance to use my cookie press that we got as a wedding present that I've never used!
@GABride2010- thank you too!!! the Spritz to me are like a sugar/butter cookie. I'd be happy to share our recipe if you like. We've been using the same recipe since i was a kid. My mom actually gave me her cookie press (which is electric) since she doesnt use it anymore. I dont know what i would do if the thing died on me. You cant find them like i have anymore!!!
And honestly girls- the fudge and peppermint patties are EASY!!!!
1 1/2 teaspoons baking powder
Pinch of Salt
1 cup butter
1 1/4 cups sugar
2 eggs
1 teaspoon vanilla
Sift flour, baking powder and salt. Cream butter and sugar well. Blend in eggs and vanilla. Add sifted dry ingredients. Chill in the refrigerator at least 4 hours. Work with cool dough. Roll out thin on a floured board. Bake at 400 degrees for 5 or 6 minutes until lightly brown around edges. This dough is very short and must be rolled gently so it will not stick. Makes about 5 dozen.
Spritz Cookies-
1 cup butter (salted)
3/4 cup sugar
3 egg yolks
1 tbsp vanilla
1/8 tsp salt (pinch)
2 1/4 cup flour
Cream butter and sugar, add egg yolks and vanilla. Then mix in flour. Refrigerate dough for 20 mins then go ahead with cookie press and decorate as you like. Sprinkles before you bake. Bake at 350º for golden brown- about 10 mins or less.
