Baked Mac N Cheese

One of you guys had asked for the recipe when i posted about it on the weekly menus but I apologize i dont remember who. I also apologize it took me THIS long to make it. We had it for dinner tonight and it was good!

2 tbsp cornstarch
1 tsp salt
1/4 tsp pepper
2 1/2 cups milk
2 tbsp butter
3 cups shredded cheddar cheese
8 oz elbow macaroni, cooked
Bread crumbs

In medium saucepan combine first three ingredients- stir in milk. Add butter, stirring constantly over medium high heat until sauce thickens. Don't stop stirring or it will burn.  Remove from heat.  Add sauce to cooked pasta, along with 2 1/2 cups of cheese and stir until melted. Pour into a casserole dish, sprinkle remaining cheese on top along with bread crumbs. Bake uncovered at 375º for 25 mins. Makes 4 servings. 
* I doubled this for my husband and I.  I added hot dogs to it at his request so we ate it as a meal and i have about half left for leftovers :)

  • YUM! It wasn't me who asked for the recipe, but I LOVE mac & cheese. It's definitely one of my favorites! I'm always looking for one that's more creamy than saucy. 

    I did make a baked butternut squash mac & cheese over the weekend. I doubled the recipe and half went to a friend that just had a baby and we kept the other half. It was definitely overly saucy, but I figured it would work out later when it's reheated.

  • Oh wow! that's an interesting combination!!! Was it good?

    This recipe (IMO) had the right saucey/creamy combination. I hate when mac n cheese is too dry.

  • I only had a taste when it was done to check it and it was good! Just the right amount of butternut squash. I'm actually curious if H will be able to tell there's squash in it when I reheat it later this week.
