Weekly Dinner Menu 1/18/15

Sunday: Maple glazed pork tenderloin with garlic roasted potatoes and green beans
Monday: Leftovers
Tuesday: Hubby is gone and I have a late night so something quick like soup and salad
Wednesday: Pan-fried tilapia with cauliflower, raisins, and capers with french fries and sugar snap peas
Friday: leftovers
Saturday: eggplant bake

  • Sunday- leftover Baked Ziti
    Tonight- Bisquick chicken with rice and veggies

    Rest of the two week list:
    Baked Tilapia with cous cous
    Pasta with shrimp and pesto
    New England clam chowder
    Balsamic Chicken over rice
    Mac n cheese with hot dogs
    Chicken Ranch Tacos
    Crunchy Onion chicken with sesame noodles

  • Sun: came home from a weekend with friends so we just ordered pizza
    Mon: garlic herb roast w/ mashed potatoes & sauteed green beans
    Tues: tacos
    Wed: braised chicken w/ artichokes, tomatoes, spinach & rice
    Thurs: portobello pork tenderloin w/ a rice/quinoa blend & veggie
    Fri: I don't have a name for it. It's a bake with chicken thighs, chorizo, sweet & red potatoes, squash & orange 
    Sat: leftover bolognese from the freezer

  • @chrisnjay05212010‌ I'm so glad to see that DH and I aren't the only ones who eat hot dogs and Mac n cheese for dinner!!

    @bpphoto785‌ what liquid do you braise your chicken in? I braised a chicken in balsamic vinegar, and I loved it, but DH wasn't impressed!

  • Saturday: Crockpot turkey potpie soup

    Sunday: We took a picnic with us wine tasting and never got hungry for dinner. I was going to make chicken with artichoke hearts, but I ended up putting the chicken in the freezer. 

    Monday: My FIL came over for dinner so we had molasses brined chicken thighs, paprika roasted red potatoes and roasted artichokes

    Tuesday: I have a work event and will eat there and hubby is having leftovers

    Wednesday: Crockpot salsa chili

    Thursday: I have a work event that hubby is coming to...our plan is PB&Js in the car on the way

    Friday: Tortellini and alfredo sauce

    LOL my DH actually likes the hot dogs cut up into the mac n cheese.  I do it this way for him and i just eat around the hot dogs.  I would much rather have my hot dog on a bun and my mac n cheese plain ;)

  • H & I do mac & cheese with hot dogs too!! It's one of his favorites, he gets so excited when I make it! It's so easy to keep hot dogs in the fridge and mac & cheese in the pantry for when I don't feel like really cooking. 

    @GABride2010 this is the original recipe. The chicken is braised in wine and broth. I make it with chicken breasts cut into large strips because the thighs don't always cook through in 20 minutes and chicken off the bone is easier for leftovers. I also add the tomatoes earlier so they're softer (H hates raw tomatoes), and substitute mushrooms for the olives (I don't like olives).

  • @chrisnjay05212010‌ I'm with you...hot dogs are meant to be eaten in the bun and not cut up into Mac n cheese! I like my Mac n cheese pure though (without things added into it, like bacon, chili, etc...)

    @bpphoto785‌ that recipe looks amazing! I will definitely have to try it. I've only braised chicken once (and it was a whole chicken). I had problems with the skin sticking to the pan. I used a Le Creuset braiser pan. Any tips on getting good crispy skin that doesn't stick to the pan?

  • @GABride2010- yes PURE mac n cheese! Totally agree!!! A friend of mine asked me about adding bacon and i was like ummm ew no.  I LOVE bacon but not in my mac n cheese!  I ain't fancy LOL

  • I'm weird, and I pretty much only like bacon in breakfast things. I don't want it on my burger, in my pasta, wrapped around my steak, and especially NOT in my Mac n cheese :)

    As fate would have it...DH and I had hot dogs and Mac n cheese for dinner last night!

    @GABride2010 TBH I usually remove the skin when making chicken pieces (an old WW habit). When I make a whole chicken, to ensure crispy skin, I usually stick it under the broiler a few minutes at the end of cooking.
