    Monday - black bean enchiladas
    Tuesday - lemon pepper tilapia with baked potatoes and roasted broccoli
    Wednesday - stirfry chicken and veggies
    Thursday - spaghetti, salad and garlic bread
    Friday - takeout - I don't cook on Friday
    Saturday - leftovers or tacos

  • We bought a roasting chicken and asparagus with salad fixings. That should last most of the week. I'll toss some thyme, salt, pepper, and lemon in with the chicken.

    Lent starts this week, so for Ash Wednesday and Fridays through Easter we won't be having meat. I don't mind so much but DH is a crazy caveman meat-lover. I'll probably make omelettes or pasta on those days, but id love suggestions for your favorite meatless dinners!

  • I remembered this week!

    Week of February 16th-Monday-  chicken tamale pie
    Tuesday- Out downtown, we have tickets to see Chicago
    Wednesday-  lemon & garlic tilapia, brown rice, veggies
    Thursday-  stuffed peppers
    Friday- breakfast for dinner
    Saturday- yumasetta (it's a ground meat and egg noodle dish that the in-laws passed on to me)
    Sunday- crockpot chicken & sausage creole

  • Tonight - leftover P.F. Chang's
    Tomorrow - taco meat with peppers, onions, green chiles, cheese, and sour cream. mmm!!
    Wednesday - Friday - leftovers! We will have leftovers from the taco, and we also have a bunch of pork left from where we smoked a boston butt over the weekend.

  • Sunday we had the French Dips with H's family.  We made it a few weeks ago also.  We made broccoli and bought macaroni and potato salad for sides.  They were so delicious!

    Monday we had chicken cutlets, string beans and peppers, and mac and cheese.

    No idea for Tuesday.

    Wednesday no idea, but no meat for Ash Wednesday.  Possibly fresh cheese ravioli.

    Thursday no idea.

    Friday no idea, but also meat free.  Will make cheese ravioli if I don't get them for Wednesday.

    @ramstein1027 My H isn't Catholic, but goes along with no meat to support me.  It kills him that I don't eat seafood because there would be a lot more that I could eat.  We usually eat a pasta dish, fresh ravioli or pizza every Friday.  For lunch at work I usually eat pizza or peanut butter and jelly.
  • I really wanted to plan something for this week but since I've been sick I haven't wanted to eat anything.  Now DH is sick and can't taste so I have no drive to cook.  I did make French bread for the first time yesterday and it came out yummy.  I thought that I would be able make french bread pizza with it but the loaves were huge.  Next time I will have to divide the dough more.
