Hope everyone is having a Happy Easter!

I'm back to cooking a bit because my seder is over.  I do have leftover brisket, which we will eat this week (although considering I had 13 lbs of meat of 16 people, only 3 lbs is left!), but I'm also in the mood to cook.

Tonight- finishing up the leftover lentil soup i made since i'm going to the gym after work and DH is working late

Tues- Anniversary Chicken with sesame noodles
Wed- Salsa chicken over rice
Thurs- Easy Lo Mein
Fri- homemade pizza

DH is finally not travelling this week (after almost 2 weeks on the road) so I'm back to cooking too.

I have a ton of left over Easter ham...8lbs was the smallest I could find!

Here is what I have planned:

Tonight - ham, garlic, and cheddar pasta bake

Tues - lemon thyme roasted chicken with fingerling potatoes

Wed - leftovers from Easter dinner

Thurs - ham cobb salad

Fri - pasta with spring veggies

I did not meal plan for this week, but I do know I will be looking up recipes to make with my new Spiralizer.

I have no idea what we will be eating this week. I haven't done our meal plan. We will just wing it this week.

I need to find some healthy recipes (that actually taste good). This is hard for me because I'm a big burger, pizza, and pasta girl. I'm trying to cut back on calories, but my food has to taste good. Anyone have any good recipes?

@GABride2010 I hear you! We're always trying to eat healthy, but love cheeseburgers, pizza, and pasta, too.

Here are some of my favorite recipes that are also healthier:

Roasted Chicken with Lemon-Garlic Green Beans and Potatoes

Under 500 calories a serving and cooks in one pan. This is seriously one of my favorite dishes to make and eat.

Bubble Up Enchiladas

Not sure how you feel about using some pre-packaged stuff, but this recipe is delicious, easy, and under 600 calories a serving. 

Chopped Thai Chicken Salad

This is sooooo good and under 300 calories a serving

Ham and Garlic Cheddar Pasta Bake

Made this last night with leftover ham from Easter and loved it. Under 600 calories a serving.

I hope you find some inspiration with these.  If you like fish or shellfish, I can include some of that too.  Basically, taking out cream sauces, cheese, and grain-rich foods (pasta), does a lot to get on a healthy track.
