What to do with shredded beef?
I finally got H to splurge on a Crock Pot and make a 2lb roast beef on Sunday. I'm not a big eater in a single sitting, and we still have at least a pound of it leftover. I was thinking of doing something with blistered cherry tomatoes and papparedelle one night, but still debating on what to do with the rest so it doesn't feel repetitive. Maybe sandwiches with horseradish and nice crusty bread? Any other ideas?

I like to make quesadillas with shredded beef, or chicken. But the sandwiches do sound yummy
