Weekly Dinner Menu 5/17/15

Hey all!  Back from vacation and took me about a week to feel back in sync.

This week: 
shrimp and leek sauté over pasta

And then over the holiday weekend, I want to make a bunch of freezer meals for my SIL and BIL.  We are visiting them in a couple weeks and they are expecting twins and with their 3 other kids... oi.  Recommendations?  Large batch food and something healthy.

  • Sunday: Onion tart with salad
    Monday: Chili mac and cheese
    Tuesday: DH is coming to a work event with me
    Wednesday: leftovers
    Thursday: Roasted balsamic pork chops with potatoes
    Friday: something on the road, we're driving 9hrs to my grandparents' house for the holiday weekend

    @BlueBirdMB This isn't the chili mac recipe I'm making this week, but I've made it before and it is yummy and has been lighted up. I also think it would be pretty kid-friendly for the other 3 kids: http://www.cookinglight.com/food/recipe-finder/freezer-meals/chili-mac

  • The little one eats anything and the other two literally eat NOTHING, so honestly, I'm not worried about kid friendly or not, but the chili mac looks super yummy!
  • I'm back from vacation and feel like i need a whole week to recover!  We got back way later than expected on Sunday due to traffic!  I have a mish mash of whats left in the house this week until i go grocery shopping on Friday

    Monday- Quiche Lorraine
    Tuesday- Breaded tilapia with cous cous
    Wed- Tacos
    Thurs- Not sure yet, maybe grilled chicken
    Fri- usually take out or something quick since i hit the grocery store after work

    @BlueBirdMB- These aren't what i would call healthy but for freezer meals i normally do- pulled pork, shredded chicken tacos and baked ziti.  Let me know if you need any recipes.

    I'm started work a few weeks ago, but H still hasn't found a job, so he is a SAHH right now :) He does most of the meal planning and cooking.

    @DZKathryn will you share your onion tart recipe? We are growing onions in our garden, and the tart sounds really good!

    I made it up, so there are no exact measurements. 

    1 lb shrimp
    4 minced garlic cloves
    olive oil
    fresh basil
    juice from half of a lemon
    2 leeks cleaned and sliced
    white wine

    Basically I just throw the garlic in a pan with olive oil and let it get fragrant.  Then I add the chopped fresh basil, shrimp, leeks and let those cook around a couple of minutes.  Then just before the shrimp is fully cooked add more olive oil, white wine, lemon juice, and salt and pepper.

    Serve over pasta.

  • @GABride2010- Doh! I knew it was GA to OH but i typed it out wrong, lol.  How is the adjustment going?   On our vacation we met some super nice GA cops :)

  • It is going ok I guess. We still haven't made any friends, which has been kind of tough. We are living in an apartment, and I got woken up early this morning by the people upstairs stomping around. I wish we lived out in the country! There is still a good bit of adjusting for us, and DH hasn't found a job yet. Everything will work out in time though. Thanks for checking on me!

  • Hopefully now that you are working you'll meet some people! Fingers crossed your DH finds something soon!!

    We were actually in Washington DC for Law Week, so police officers from around the country attend.  The GA guys happened to be Blue Knights (as is my DH) staying in the same hotel as us.  The Blue Knights are a motorcycle law enforcement club.

    This was my first time making it and we LOVED it! So yummy! The leftovers the next day for lunch were really good too!

    @DZKathryn Thanks for sharing the recipe. That looks so good. I will have to make that when H is OOT. He likes onions on some things, but he doesn't love them like I do!
