I have a lighter work week, so I decided to make a fancy meal tonight. Also, I'm feeling French food, so I whipped out the Julia Child cookbooks.
Tonight I'm making sautéed chicken with herbs and garlic in a egg yolk and butter sauce. With garlic broiled tomatoes and potatoes sautéed in butter.
It makes a ton of food so we will have a bunch of leftovers to eat through.
In no particular order, I will also make:
grilled kielbasa with a french potato salad and green beans
pesto pasta with sun dried tomatoes, asparagus, and a fried egg
Then 4th of July weekend probably no cooking.

Here's my ideas for this week in no order:
Homemade Pizza
Shredded chicken nachos
Fried halibut with sautéed asparagus
Breakfast
My parents are coming up on Friday, and I'm sure we will do a lot of eating out Friday-Monday. My dad doesn't eat meat, gluten, or sugar, but he does eat seafood. My mom doesn't eat red meat, pork, gluten, sugar, and most dairy. Restaurants will allow us all to get what we want without having to figure out what to make that all of us will eat!
The rest of the week:
Steak sandwiches
Beef kabobs and roasted potatoes
Chicken Ranch Tacos
London Broil with chicken rice and artichoke salad
Hmmm somehow i wound up with alot of meat this week, LOL
There are no measurements for it but here it is
Vodka Sauce
1 stick of butter
1 onion-chopped
Garlic- 2-3 cloves minced, more or less to your taste
1 can crushed tomatoes
3/4 of a can of water
1 small can tomato paste
1 cup vodka (or white wine)
parsley
oregano
red pepper, a pinch or more to your taste. Depends on how much spice you like.
Half and half, roughly a 1/2 cup to 1 cup depending on how light you like it
Melt butter in a large pot, saute onions and garlic. Add crushed tomatoes, water, tomato paste, vodka and spices. Bring to a slow boil and cook about 20 mins. Add half and half, simmer a few more mins and done!
Thanks @chrisnjay05212010! That recipe sounds so good! I don't keep vodka in the house...what kind of white wine would you suggest instead? Chardonnay, Pinot Grigio (sp?)? Certainly not a moscato or reisling I would imagine!
I've done it with pinot grigio and with chardonnay, it doesn't seem to change the taste. I hate chardonnay and somehow i wound up with like 3 bottles so I've been using them up
