Crockpots!

Hello ladies!

What is your favorite crockpot recipe???  Bonus points if you can prep ahead of time, put it in the freezer, and take it out when you are ready!

My two favorites:

4-5 chicken breasts, 4 bell peppers, an onion, cumin, chili powder (not much), and garlic, on low for 6-7 hours.  Shred the chicken, and then you have fajitas!

3-4 chicken breasts, 16oz tomatillo salsa, cumin, chili powder, garlic, and fajita seasoning for 6 hours on low.  Shred the chicken and bam, tacos!

    Salsa Chicken
    4 chicken boneless chicken breasts
    1 jar (the regular smaller size) salsa
    1 can cream of chicken soup
    1 packet taco seasoning
    1 cup sour cream

    Add chicken, salsa, cream of chicken and taco seasoning to crockpot. Stir til combined.  Cook on low 6 hours.  Add 1 cup sour cream and shred chicken, mix til sour cream is combined.  I served over rice but you could easily do it over egg noodles too.


    Lentil soup
    2 medium carrots, cut into chunks or slices
    2 celery stalks, chopped
    1 medium onion, chopped or chunked, your preference
    2 cloves garlic, minced
    2 cups dry lentils
    1/2 tsp dried thyme
    1/2 tsp salt
    1/4 tsp pepper
    6 cups chicken broth
    2 cups water
    Small pasta

    place ingredients in slow cooker in the following order-carrots, celery, onion, garlic, lentils, thyme, salt, pepper, broth and water. Cover slow cooker, cook on low for 6 hours.  Cook pasta separately and add to soup when ready to eat.


    Stuffed Peppers
    - enough peppers to fit in your crockpot. In a 6 qt oval, i can fit 5-6.
    -1 lb lean ground beef
    -1 cup rice (doesnt have to be cooked)
    -1 can diced tomatoes, can be italian flavored or if you dont have add 1/2 tsp italian      seasoning
    -1 tsp Worcestershire sauce
    - 2 Tbsp ketchup
    -1 tsp black pepper
    -1/3 cup water ( i add about a can of tomato sauce into this as well to create a gravy)

    In a bowl, mix ground beef, rice, with all ingredients except water and obviously the peppers. Wash and clean out peppers, Save tops. Stuff each pepper with a good amount of the mixture. Nestle peppers into slowcooker and put pepper tops back on. Pour 1/3 cup of water around base of peppers. Cook on low 6-8 hours.


    Pulled Pork ( a huge favorite)
    3-4lbs pork loin roast
    1 large onion sliced
    2 Tbsp vinegar
    1/2 cup water
    2 Tbsp lemon juice
    1 cup ketchup
    3 Tbsp Worcestershire sauce
    2 Tbsp brown sugar
    2 Tbsp mustard (Gouldens or something spicy brown)
    1 tsp chili powder
    1 tsp salt
    1 tsp pepper
    Mix all ingredients into the crockpot. Cook on low 8-10 hours.  Use two forks to shred meat before serving. Give it a good mix, serve on hamburger buns, plain or over rice.


    Shredded Chicken Tacos (i usually serve over rice, but you can also serve just like tacos with all the fixings)
    Abt 2.5 lbs chicken breast (one regular package is ok)
    1 can of corn, including juices
    1 can of diced tomatoes, including juices
    1 can of black beans, including juices
    1 package of taco seasoning
    Put all in crockpot and mix. Cook on low 8-10 hours. Shred chicken and mix


    Slow Cooker Buffalo Chicken Sandwiches
    4-6 boneless chicken breasts
    1 bottle Franks Wings Buffalo sauce
    1 packet Ranch Dip/Dressing mix
    Few Tbsp butter- the butter help cuts the spice, so add more if you like less spice.
    Put chicken in crockpot on the bottom. Pour bottle of hot sauce over chicken then sprinkle ranch packet on top. Cook on low 6-7 hours. Using two forks, shred chicken and add butter. Leave on warm or low until butter is melted. Serve on buns and with a side of ranch dressing

  • One of my favorites is a whole chicken! Take a fryer chicken (size depends on your crockpot/family), rinse it, and dry with paper towels. Put it in crockpot and rub all over with olive oil and desired seasonings. I use S&P, granulated garlic and Italian seasoning, but you can use whatever you like. Put the lid on and cook for 8 hours on low or 4 hours on high. The chicken is juicy and falls off the bone.

    We eat it that night with side dishes and cut up the rest and make chicken salad. Enjoy!

    TIP: For both, remember to spray your crockpot with Pam for easy cleanup!

    Fast Yummy Chicken
    Package of Frozen Chicken
    Jar of Salsa
    Can of Black Beans

    Directions: Dump all in the crockpot, set on medium for 6 hours.  Enjoy.

    This is a great quick recipe that can be always made in a pinch with pantry items.  Always make sure you have these three on hand in the pantry and you will always be set!

    Award Winning Chili
    1 lb ground beef
    1 medium onion (white or yellow, your preference)
    4 cloves of garlic

    1 large can of each of the following:
    Whole Kernel Corn
    Red Kidney Beans
    Black Beans
    Kidney Beans
    Crushed Tomato
    Diced Tomato

    1 pkg of Hidden Valley Ranch Dressing

    Directions: Dice the onion and garlic.  Brown the ground beef at the same time as cooking up the onion and garlic.  Drain off the fat and put in the crockpot.  Open all the cans and dump everything into the crockpot.  Add the package of dressing and mix well.  Everything should be covered in water from the cans, but if not, add a little more water.

    If you are like me, and replace the canned beans with dried beans, make sure you add enough water.

    This makes ALOT, so after it cools down, I generally spoon this into several containers and freeze for future use (ie: chili dogs, nachos, lunches, etc...).

    CAUTION: This is very high in fiber and will make you "windy"!

    This easy chili recipe won a local cook-off award.
