Weekly Dinner Menu 8/30/15

The past month has been very off, cooking-wise.  DH has been out of town pretty much the whole month, only returning for a day or two in between, which is very unusual for his schedule, so I've been cooking for one (lots of tuna sandwiches lol).  Also, my summer work schedule is all over the place, which can make it more difficult to plan cooking.

Fall schedule starts this week, which makes me sad because summer is over, but I'm looking forward to roast-flavors, baked goods, apples, cinnamon, boots, and layers!

Today: Biting the bullet to roast hens with tomatoes, onions, and olives
Monday: spaghetti carbonara 
Tuesday: leftovers
Wednesday: crockpot barbacoa tacos
Thursday: leftovers
Friday: leftovers

The weekend... I have no idea what's happening yet.

Re: Weekly Dinner Menu 8/30/15

  • We've been crazy the past month or so too! DH has been traveling, I got a new job, we sold our house and are finally closing escrow (next week) on a new house! 

    I don't have the whole week figured out, but here is what I do know:

    Monday: honey chicken with roasted corn salad

    Tuesday: tortellini and bacon salad

    Wednesday: creamy pasta with bacon and peas

  • To add to the weekend, my parents and I decided to go to this funny/awesome restaurant in Maine on the water.  It's literally just a platform on the water that only sells basic seafood, but you can bring your own... whatever that they don't sell.  People bring table clothes, flower, booze, wine glasses, apps, salads, desserts, you name it, they bring it.  It's hysterical and awesome and the perfect way to enjoy an amazing view and lobster.

    I'm bring a caesar salad, mint lemonade, and wine and my mom is bringing potato salad and a dessert.
