Lunch?

What do you do for lunch generally (if you pack/eat at home)?? I struggle with lunches because I dont really like sandwiches that I make ahead of time and get into a routine with something and then bored. Right now I am kinda at a loss....

 Ideas? what do YOU do for lunch?

  • I usually bring the same thing for lunch for a few weeks until I get sick of it and then I switch it up. I try to make enough for dinner so I have leftovers, but otherwise, right now I'm bringing an asian side salad, instant brown rice and a morningstar burger. Plus I always bring a flobbityjillion snacks to much on throughout the day.

     

  • I am not a fan of bringing a sandwich from home. I usually try to make something on Sunday and portion it out for the week. This week I am having this delicious black bean soup with Kashi crackers and veggies or fruit. Sometimes I bring rice and beans with some cheese. Some weeks I do pasta bakes. I have made batches of chicken curry and brought it with rice or pita chips. Come to think of it, those are the main things I do. I need to branch out to some different dishes. I do mix in assorted dinner leftovers, or the occasional Amy's meal or salad with chicken from the grocery store salad bar.

  • More times than not my lunch is a Smart One Chicken and Cheese Quesidilla (4 pts) with fruit or veggies. I also do left overs. I wouldn't consider me a good example. Lunch is the meal that I could eat the same thing over and over again and be fine with it.

  • I can't do sandwiches from home.  They never taste good.

    I went through a phase where I was eating cereal and yogurt a lot for lunch.  It was easy and cheap.

    Lunch at work is my eternal problem though.  The one good thing about my crappy job situation right now is that I work from home, so I don't have a lunch issue.

  • I bring leftovers. ?I always make enough dinner for at least 4 servings, so that gives me a couple lunches (or it gives H and me 1 lunch each). ?On rare occasions I'll do an Amy's frozen.

  • I do a lot of leftovers.  I'll make pasta or whatever and eat it the next day.  I have before made a big batch of falafel & cous cous on Sunday night and eaten it for at least 3 days with pita and hummus at work.  That is delicious and filling.

    I actually love sandwiches from home.  I guess it's because I've been a vegetarian so long.  I just discovere Yves deli "Ham" and now I can have "ham" sandwiches!  They just thrill me.  It's like being 9 again, but with half the fat, cholesterol, and calories.

  • I try to make something that works well for leftovers on either Sunday or Monday so we have it for lunches for the beginning of the week. Sometimes I buy some frozen dinners at the grocery store if they're at a good price. I usually get takeout about once a week, and once every couple weeks, my office orders in.
  • I hate sandwiches with the fire of a thousand suns, esp homemade ones. I'm big on leftovers. I can't make just two servings for dinner (it's not in my DNA), so it's fairly easy. I try to make pasta Sunday or Monday night, or soup/stew, something lunchable. Sometimes roasted root veggies/potatoes and meat - if we have pork chops or something I cut up the leftovers after dinner so I don't have to cut it up at my desk.

  • Leftovers or smart ones or healthy choice etc. If I don't have anything else I'll do a peanut butter & jelly sandwich. That's what I actually did today.

  • I cook ahead.  I make a bunch of meals that can be frozen into individual portions, then I take that with some fruit, and a salad or veggie that can be steamed in the microwave.  I have a few quick meals for when I haven't had time to cook -- today I'm taking Amy's organic lentil soup (Core) and a baked potato (Core). 
  • Im weird with most leftovers.... but chili... that I can do! thanks! :)

  • I've struggled with bringing lunch to work since I always seem to be rushing out of the door and end up leaving them on the counter.  How about bringing a Lean Cuisine or something?  What about soups or those pre-packaged meals from the store?
  • yeah I struggle with that too (forgetting stuff) but Im way picky about frozen meals (ie: hate most of em). Might be a good idea to stash a couple here though for just in case... hmm.

  • PGH, I hate leftovers too.  My husband thinks it's really weird, but I just don't think things taste the same!  I have found several meals in Cooking Light and family recipes that freeze well, so I have homemade frozen meals.  Much, much better than lean cuisine!

    I hate frozen meals too.  Do you have a Trader Joe's near you?  In a pinch, I can tolerate some of their frozen rice bowls.  The Chinese and Japanese inspired ones suck, but the Thai and Indian ones are pretty good.  A lot of them are only 300 calories or so (there's one that's 600 though, so read the labels)...one of those and a piece of fruit usually makes for a decent, easy lunch.

  • Ill take a look next time Im there (its a hike but a once-in-a-while shopping trip). Basically lunch sucks. Least fav meal.

  • I have been bringing in Pannini's (I got a maker for Christmas) and warming them up - yum! Tonight mad H a ham and brie and me a turkey and artichoke.

    Or I like to eat a salad I make from the salad bar at work.
