tried and true leftovers recipes?
As a f/u to my menu planning...do you have a dish in your repertoire that you know you'll have leftovers of that you can use in another way?
i.e... I made roast beef. I had a big chunk leftover, so I shredded it and used it to make beef enchiladas the next day.
I'm looking for recipes like this b/c with two adults eating, there is almost always leftovers and they almost never get eaten in the same form as originally intended.

Example: one other one is roasting a whole chicken one night and then using the leftover chicken in a pot pie later in the week.

I do a chicken once every two weeks, so I am no help to you... but what about trying the what's cooking board. They might have some ideas. I would love to see some responses though, because we are in the same boat.

We do the roasted chicken - but not the pot pie - we do chicken cacciatore with it.

I have a couple that I do all the time.
Ground beef-use 2/3s for meatsauce or meatballs, use 1/3 for mexican pizza
(put the 1/3 beef into frying pan with garlic, salt, pepper- until brown. take tortilla shells and cover with refried beans, top with meat, top with cheese, top with another tortilla. either bake or put in pan/grilled until cheese is melted. we add veggies in there and salsa too)
Chicken- pan fry chicken breast strips in italian dressing for chicken quesadillas OR coat chicken in flour for garlic chicken and pasta/chicken marsala. I sometimes split up a package of chicken breast in order to get a few meals out of it. If you make a whole chicken you could use some in a chicken noodle soup or as a topping to a salad or creamy pasta dish.
When I have leftover chicken, I shred it up, mix in BBQ sauce and let it soak in for a day or so. Then, I buy the pizza dough from the grocery store and make BBQ chicken pizza... just roll out the dough on a pizza stone or cookie sheet, throw on a little extra bbq and the shredded chicken, crumble on some bacon (if you want), throw on some finely sliced sauted red onions, some cheddar and mozerella cheese, and bake it all up for about 15-20 minutes.
You could make calzones out of it too
Growing up, my mom always made turkey tetrazinni out of left over turkey...
Mine are sorta similar to yours actually...
Pot Roast in the crock pot, then shredded beef tacos another day
Shredded Chicken tacos in crockpot(well cook the chix breasts in there) and then I save the cooking liquid(tomato/taco based) and leftover chicken and add black beans, corn, spices and any other veggies I want for taco soup.
Costco Roasted Chicken, eat the breasts for dinner then remove a good portion of the meat leaving some, then boil the whole thing down for about 1 1/2 hrs(even skin) with celery, onions, carrots, bay leaves, thyme, garlic cloves just smashed a bit. Strain and either freeze the broth or use the leftover chicken for soup. I love to add a can of diced tomatoes and rice with fresh celery, carrots and onions for a different spin on chicken soup!
Roasted butternut sqash, leftovers added to risotto are delish.
We had Prime Rib for Xmas and I made the most expensive BBQ beef sandwiches out of it's leftovers LOL! I just thru the wole thing bone in, in the crock pot with a bittle of beer, so soften up as it was medium cooked when we served it, cooked it for about 4 hours, then removed and chopped the meat, added BBQ sauce and put back into cleaned out crock pot to heat thru! DELISH!
For leftover mashed potatoes I add and egg a bit of flour(tbsp or two) some onions, form into patties dust with a iny bit of flour and fry in a bit of evoo and butter! Those are my fav I had them growing up.
Also for mashed potatoes if there is a lot I add a half pack of softended cream cheese, salt and pepper and spread in a greased casserole dish bake for 20-30 mins...it makes the consistancy of the potatoes better you know leftover gets mealy.

Garlic Chicken with Pasta
Coat chicken in flour, stir in some chopped garlic into pan with margarine/butter (I actually use both in there). Let it get slightly brown and cooked thoroughly.
Cook whatever shape pasta.
In small sauce pan melt down 1/2 stick margarine. Add in fat free creamer and parmesan, add salt, pepper, garlic, to taste. It should be a light alfredo type sauce.
Pour over pasta and stir in chicken.
*I sometimes add pesto to the sauce or to the chicken- I don't flour the chicken if I use pesto to cook it, mmmm*
