Good morning ladies
So I am trying to figure out some healthy lunches for me. I used to either have a turkey sandwitch or a frozen lean cuisine. Now I can't eat lunch meat and the frozen meals are a little high in salt and preservatives so I want to try and bring some healthy alternatives. I was thinking quiche since it is high in protein and I could also get my veggies in. Anyone have a good recipe? Also I am game for any other thoughts. My only requirement is that they are quick as I only have 26 min to eat lunch. Thanks!

How about mac and cheese or lasagna? I make both in huge batches over the weekend then freeze small portions for andrea to take for lunches. Put them into the fridge the night before then when ready to eat, pop 'em in the microwave for a few minutes and you're good to go.
- use whole wheat noodles, low fat cheese, and extra veggies in the lasagna to make it extra healthy (let me know if you want recipies)
Chili is another one she likes for lunches...

1 cup cottage cheese to 1 can of tuna, some people add fruit... I dont I add shredded cheese and bring bread (Whole grain, wheat) and some saltine crackes... oh yea and hot sauce... usually chalupa.
Sounds gross, yes, honest it isnt bad... and it fills you up. I lost 10 lbs eating that for lunch with the kiddos I work with instead of pbandj or mac and cheese. I dont even like cottage cheese but you dont taste it its just what will fill you up.
Thats my favorite easy-and-quick lunch recipe - I make them 3 days in advance.
My quiche recipie
I use the pie crust that is refridgerated. Put it in a pie plate and cover the whole thing with tinfoil bake at 400 for 5 minutes. Remove the foil and bake for another 5 minutes.
Take the crust out and add what ever you want to fill it with - about 2 1/2 cups total. Mine is usually either ham or some veggies ( spinach or brocolli) and shreeded cheese.
Mix together 1 cup half and half and 2 eggs,pour over the top. cover the edges of the crust with foil so they dont burn and bake 40-45 minutes.
Easy and it microawaves really well. Hope it makes sense since it is just out of my head ( we make it that often)
