Hey! Do you mind sharing your recipe for white chicken enchiladas?  I have one that my mom makes and I love, but I can't get it to turn out the way she makes them. TIA!!

  • sure!  This is sort of a base recipe and you can change it as you feel fit.

    1 can cream of chicken

    1 16 oz container sour cream

    1 can green chiles

    Mix these three ingredients together is a sauce pan. 

    Cube 2 (ish) chicken breasts (or you could boil and shred the chicken) and brown them - Sometimes I saute an onion in the chicken too. 

    Add half of the mixture to the chicken. 

    Add some milk to thin (but not too thin) the remaining sauce.

    Fill flour tortillas with the chicken mixture and cheese. 

    Put the enchiladas in a 9x13 casserole dish (or sometimes I just have enough to fill a 9x9 - it just depends).

    Cover the enchiladas with the extra sauce, top with cheese.

    Bake  until hot and bubbly
