my pic is also still on my camera so i'll go back and edit, but the recipe I want to share is for an awesome whole wheat pizza crust! its our faaaaave - crispy on the outside but soft on the inside and a really great flavor:

This is one of my favorite dishes. The cinnamon is not sweet in this dish, but adds this great bite. It is definitely not low-fat, but it is so delicious and savory. Plus, you have to splurge sometimes, right?!
Oh, and ignore the fact that the pasta in the picture is spaghetti... its better with fettuccine, like the recipe calls for, but spaghetti was all we had around when I made it.
Cinnamon-Bacon Carbonara
8 slices bacon, chopped
1/4 teaspoon ground cinnamon
2 cups whipping cream
1 1/2 cups freshly grated Parmesan
6 large egg yolks
1 box fettuccine
Salt and freshly ground black pepper
1. Bring a large pot of salted water to a boil over high heat.
While you do this saute the bacon in a large frying pan over medium heat until almost crisp, about 5 minutes. Sprinkle the cinnamon over the bacon and continue to saute until the bacon is crisp and golden, about 2 minutes longer. Remove pan from heat and allow to cool (but leave it all in the pan).
2. Once cooled, whisk in the cream, cheese, and yolks to blend.
3. Meanwhile, add the fettuccine and cook until it is just tender but still firm to the bite, stirring occasionally (about 3 minutes if fresh, longer if boxed pasta... I use boxed, it still tastes great). Drain.
4. Add the fettuccine to the sauce mixture and toss over medium-low heat until the sauce coats the pasta thickly, about 5 minutes (do not boil*). Season the pasta with salt and pepper to taste.
*Note: it is important to keep your heat at medium-low, if you see bubbling, turn it down... too high and your creamy sauce mixture becomes scrambled eggs.

Butternut Squash Bisque
Easy. Yum. Quick.
3 c. cubed, peeled butternut squash
1 1/2 c. cubed, peeled potatoes
1 1/2 quart broth
2 Tbsp. butter
2 small onion, diced
1 tsp. chives (plus some for garnish)
1/2 cup something dairy (milk, cream, whatever)
1. Saute onions in butter in stock pot until translucent (5 min)
2. Add squash, potatoes, and broth- bring to a boil
3. Lower heat, cover, and simmer for 35 minutes or until veggies are soft.
4. Smooth out with wand blender, or pour into food processor.
5. Add milk if desired (I forgot this step and it was fine- I didn't miss it. I actually didn't even salt or pepper this stuff before eating either!) Oh, I didn't have any chives, but it's better with the chives. When it's 2 degrees outside, it takes more than herbs to get me out of my jammies!
I realize now that doesn't sound right... I meant that it's too cold to put real clothing on and go to the grocery store!
Swet Sausages Braised in Onions w/Horseradish Smashed Potatoes - RR
2lbs small red potatoes, cut in qrts
coarse salt
8 links sweet Italian sausage ( I did half sweet and half spcy)
2 med yellow onions, thinly sliced
2-3 T chopped resh thyme leaves (I used dry)
3 cloves garlic, chopped
coarse black pepper
1/4 C balsamic vinegar
14 oz (1 can) chicken stock
2 T honey
2 T unsalted butter
1/4 C sour cream
1 T horseradish
1/4 C milk
1/4 flat-leaf parsley
Boil potatoes for 10 - 12 minutes
Heat evoo in large skillet - add sausage links and brown on all sides - remove and set aside
To skillet add onions, thyme, and garlic and season with s&p. Cook onions until they begin to brown. Add balsamic vinegar, chicken stock, and honey. Simmer, then add the browned sausages back to pan and braise the sausages until cooked through and the sauce has reduced by 1/2 (about 8-10 minutes)
While sausages are braising, drain potatoes. Add butter, sour cream, milk and horseradish. Season with s&p. Smash.
**Both K and I really like this. I'm not big on horseradish but I loved the potatoes and the horseradish worked really well with the balsamic reduction.**
lol! I sooo know what you mean. I just baked brownies and have no milk. But it's too cold to leave the house and I can't talk K into going to the store for me.
