Winter Soup Recipe for Cold SJ Nesties

Hey gals, I wanted to share a recipe that DH and I love. It's more of a winter recipe and I know you gals are freezy your tushies off in Jersey. I can make this for dinner in 30 mins. The best part is that the chicken is already cooked!

Easy Healthy Chicken Tortilla Soup- Makes approx 6 servings.

Need a soup pot, immersion blender or regular blender.

  1. V8 Sweet Red Pepper boxed soup $2.50
  2. Diced canned tomatoes $1.39
  3. Canned black beans (optional - adds a ton of fiber) $1.39
  4. Low sodium chicken broth (1-2 small cans depending on how you want soup consistency) $1-2 per can
  5. Fresh red pepper $2 per lb?
  6. Ripe avocado (optional) $dunno how much in Jersey
  7. Fresh cilantro (optional) $0.79 per bunch
  8. Reduced fat colby Sargento cheesesticks $3 per pack
  9. Tostitos Organic Yellow or Blue Corn chips $3.99
  10. Cooked rotisserie chicken (I think ShopRite has?) $7 here in Fla
  11. Cumin, garlic powder, ground red pepper, ground black pepper

Warm the V8 soup, tomatoes, beans and broth in a large soup pot for 4 mins. Chop up fresh red pepper and toss in. Take immersion blender and blend in soup pot OR pour into regular blender. Blend until smooth (a couple tomato pieces just fine).

Put back in pot, turn up heat. Add spices to desired taste. Should have a slight Southwest taste. Bring to boil - then turn down to simmer for 8 mins.

Slice up half of the rotisserie chicken and toss pieces into soup. Save the other chicken for leftovers, sandwiches or if you'd like toss all of into the soup. Rinse cilantro and chop.

Ladle soup into bowl, garnish with crushed tortilla chips, chop up half a colby cheese stick and toss into soup to melt. Top soup w/ avocado slices and chopped cilantro. Enjoy!

I calculated all the calories and w/ a bowl of soup (w/ a cup of chicken), 3-4 crushed chips, half a cheesestick - it's about 350 calories for a big bowl. Note* I didn't add in avocado calories.

So, you get protein, healthy fats (avocado) fiber (beans) and lots of antioxidants (red pepper) and your hubby gets his lycopene from the cooked tomatoes. And you get a warm belly!
