Share your fav. breakfast casserole!

I'm on the search for a new breakfast casserole recipe. Anyone have one that is a favorite with a crowd? The third grade team is hosting breakfast Wednesday morning at school (for our staff of near 80! ah!) and I'd like to take one that I've made before and something new. Any ideas would be great. For the old one, I'm either going to make an egg cheese souflee or an apple sausage bake depending on what the second dish is.

  • I've never made a breakfast casserole, but I have had an awesome stuff french toast casserole at a bridal shower brunch.  It was french toast, cream cheese, and either apple sauce or jelly, then another layer of french toast.  I'm thinking you may be able to make it easy by using frozen french toast. 
  • I got this recipe from a training client and I made it when we did our breakfast at the Ronald McDonald house and it was a big hit.  I used turkey sausage and sharp cheddar cheese for mine.

  • I made this Amish Breakfast Casserole from Allrecipes.com for Christmas. We have tried several and this was by far our favorite. I didn't have hash browns so had to improvise with broken tator tots, and it was still good!

    1 pound sliced bacon, diced
    1 medium sweet onion, chopped
    6 eggs, lightly beaten
    4 cups frozen shredded hash brown
    potatoes, thawed
    2 cups shredded Cheddar cheese
    1 1/2 cups small curd cottage cheese
    1 1/4 cups shredded Swiss cheese

    1. In a large skillet, cook bacon and onion until bacon is crisp; drain. In a bowl, combine the remaining ingredients; stir in bacon mixture. Transfer to a greased 13-in. x 9-in. x 2-in. baking dish.
    2. Bake, uncovered, at 350 degrees F for 35-40 minutes or until set and bubbly. Let stand for 10 minutes before cutting.

     

  • My mom made an egg casserole for Christmas morning that was a hit, even with me.  I was very skeptical as I normally don't like that stuff but she had eggs, red peppers, sausage, and a few other things in it and it was surprisingly good. 

    She also made homemade sticky buns with raisins that were delicious.

    Bacon and Eggs Brunch Casserole

    Ingredients

    Directions

    1. Spray a 13x9-inch baking pan with non-stick cooking spray. Unroll dough and press into bottom of pan. Bake in preheated 350?F oven 10 minutes.
    2. Beat together eggs and milk in medium bowl. Pour over partially-baked dough. Sprinkle with cheese and bacon; return to oven and bake 25 minutes more or until center is set.

    Ham & Cheese Brunch Squares Recipe
     2 cups (8 oz) grated Colby & Monterey Jack cheese blend, divided 
     1 pkg (22.5 oz)  frozen toaster hash brown patties, thawed (10 patties) 
     8 oz cream cheese, softened 
     12 eggs 
     1/2 tsp coarsely ground black pepper 
     8 oz thickly sliced deli ham 
     4-5 green onions with tops, divided (about 1 cup sliced) 
     3 plum tomatoes 
    Additional coarsely ground black pepper (optional)  
    1. Preheat oven to 450?F. Lightly brush Large Bar Pan with vegetable oil using Chef's Silicone Basting Brush. Grate cheese using Ultimate Mandoline. Crumble hash browns over bar pan; press gently into an even layer. Sprinkle half of the cheese evenly over hash browns. Bake 13-15 minutes or until crust starts to brown and cheese is melted.
    2. Meanwhile, in Classic Batter Bowl, whisk cream cheese until smooth using Stainless Whisk. Gradually add eggs and black pepper; whisk until smooth. On Cutting Board, coarsely chop ham using Food Chopper. Slice green onions, reserving 1/4 cup of the tops for garnish. Place ham and remaining green onions into (8-in.) Saut? Pan; cook and stir over medium heat 2-3 minutes or until hot. Stir ham mixture into egg mixture using Small Mix ?N Scraper?.
    3. Remove bar pan from oven to Stackable Cooling Rack. Pour egg mixture over crust. Return bar pan to oven; bake 6-8 minutes or until center is set. Meanwhile, slice tomatoes in half lengthwise using Utility Knife; scrape out seeds and dice. Remove bar pan from oven; top with remaining cheese, tomatoes and reserved green onions. Sprinkle with additional black pepper, if desired. Cut into squares and serve using Mini-Serving Spatula.
  • I usually take frozen shredded hash browns and cover the bottom of a 9x13 glass baking dish.  Then I cook some loose sausage (one of those tubes of jimmy dean or something like that) and then combine it with egg beaters (enough to equate 10ish eggs) and some sharp cheddar and pour it over the hash browns.  Then I put more cheese on top and bake until it's done (I guess 30 minutes).  I know, I have a real science to it don't I....  :)
