Wednesday: hot dogs w/ tbd side
Thursday: mini thanksgiving (roasted turkey, mashed potatoes, sauted green beans)
Friday: grilled salmon (that we never got around to eating last week)

Last night I made a Pork Tenderloin, real mashed potatoes and Fordhook limas. We had some brown gravy for our "taters" and then a garlic pull-apart roll. Absolutely DELISH!
Tonight, for our anniversary, we hope to go out if Sandy is feeling better. Otherwise, I have no idea now as my plan has to be modified. Maybe some homemade veggie soup to help her feel better.
Sorry to say that we are truly "winging" it for the rest of the week. Sometimes it's just hard to be organized. But the freezer is full and the pantry is stocked so I'm sure I can cook up something YUMMY!

The order may switch up but here's what we've got:
Tuesday - soup and bread (because I work tonight)
Wednesday - crab cakes and salad
Thursday - Sloppy Joe's and corn on the cobb
Friday - Chicken Tikki Masala
Do you simply sautee the shrimp in olive oil and garlic and then place over couscous? Or is it more involved.
No clue. I think L and the kids are doing fend for yourself night (well, L will fend for the kids) since I will be at work till late. Most likely will be PB&J and fruit since L hurt her back and is out of commission.
Tomorrow will be something easy since we will be packing - pasta, veggies, etc.
We leave Thursday for Florida! Whoo hoo!
Thats basically all it is, with just a few additions:
- shrimp is sauteed w/ garlic, olive oil, and a couple squirts of lemon
- couscous is seasoned with parsley and a few tablespoons of parmesan cheese
- at the end i toss together the couscous, shrimp, and about a cup of sweet green peas....adds great color and a veggie

The goal this week? Ease. Forget health... this move is kicking my ass. ><
I'm still fighting a cold that I've had all weekend, and thus not feeling very motivated.
I'm hoping to make spaghetti tonight - if I make enough we can have for tonight and Weds, then I only have to cook one more time on Thursday (some kind of chicken) before take-out Friday saves me again. Sounds like a plan!
