Two nights ago, I made this really good soup. But I cooked way too many rice noodles for it. It's those really thin, vermicelli like kind that you see in Vietnamese and maybe some Thai food.
There's a ton left. Right now, they are sitting in the broth (chicken broth with garlic, ginger, and chile pepper). There's a little bit of leftover chicken and greens in there, but not enough for a meal for two. There's also not really a ton of broth.
Any ideas on how to make them interesting again for dinner? I've got tofu, and I can make my husband go to the store for a couple things if we need it. Worst case scenario, I'll just make the same soup again, but I'd like to do something different.
