Monday: bbq chicken drumsticks (currently cooking in the crockpot) w/ TBD side (smashed potatoes? oven fries?)
Tuesday: whole wheat pasta w/ shrimp and scallops
Wednesday: homemade turkey pot pie (courtesy of the leftover turkey from last week)
Thursday: N/A: happy hour w/ friends
Friday: pork tenderloin
Question: can you make baked potatoes ahead of time and freeze or refrigerate? Andrea loves them, but during the week its impossible - unless, of course, we eat dinner at 10pm....

this week we are eating leftover stuffed shells from dinner last night until they run out and then we will have baked chicken one night and pork chops another. Nothing very interesting this week.
As for the baked potatoes you can def. cook them ahead and then refridgerate them. We sometimes do baked potatoes for a whole week and pre bake and make the toppings for the "bar" Sautee onions, some bacon, veggies grate cheese ect. Then all we need to do is reheat the potatoes and put out the topping bar every night. One of my favorites. If you like the crispy skin you may want to reheat in the oven but that wouldn't take all that long. In a rush you can microwave them.
Thankfully I can be on the nest again after a brutal week in training all last week! As for our meals this week here they are:
Tonight I plan to make "Hunters minestrone soup" a recipe from the food network that is really good and makes for easy meals at least 2-3 times this week. The other two nights we will probably have BBQ chicken and roasted veggies.
Kind of boring but we are both super busy this week.
I agree with Sam in regards to baked potatoes. I don't think freezing is the best idea, but if you make a bunch on Sunday they'll definitely last a few days in the fridge.
We didn't create a menu for the week yet. Our weekend was spent cleaning and I never even opened the paper.
No Menu for us yet. But the ads over on this coast were dissapointing, it was all super bowl stuff! Sigh. . . . How can I make meals out of 8 bags of potato chips? :-( I'll be making the Menu tonight.
Tonight we are having grilled cheese and tomato soup.
tonight: pot roast thingy with garlic loaf (like the bread with whole cloves of garlic in them, yum!)
tomorrow: leftover chili with wheat saltines
wednesday: she has darts, so we'll probably have sandwiches with roasted garlic triscuits
thursday: fish sticks with mac and cheese and veggies
friday: going to the hockey game with some friends, so dinner out before :-D
Mon- Persian rice and lentils, cucumber yogurt sauce, and fried potatoes
Tues- Sauteed squash and pasta (still haven't done that)
Wed- N/A (work late)
Thur- Mexican casserole (still haven't done that either)
Fri- Macaroni & Cheese with green beans
Sat- Baked bbq tofu with corn and salad (So freakin good!!)
I know i have been MIA the last week or so. Here is our list for the whole week, T is finally back to work after 5 months of medical leave so its up to me to cook, ugh. Also we will have the boys 24/7 while their dad is in China for the next month so I have to meal plan for Saturday and Sunday's now too.
Monday: Haystacks (kinda like taco sald but with chili)
Tuesday: Hot Dogs Tator Tots and Green Beans
Wednesday: Make Your Own Pizza Night! (T's day off she will cook)
Thursday: Chicken Stroganoff and Green Beans
Friday: Soup and Sandwich or Salad
Saturday: Shepards Pie
Sunday: Shrimp Linguine (T's day off she will cook)
This week is month-end close for C, so she'll be working pretty late each day. I HATE cooking for one, but I came up with a reasonable plan...
Big packs of chicken breasts were on special at the store, so I picked one up and tonight will bake 3 with BBQ sauce and 3 with Italian marinade. I'll make some rice pilaf, and we always do frozen veggies.
C should be home at a moderate time tonight, so I'll start cooking soon. This way we can have a fresh dinner tonight together (albeit late), and just go through the leftovers for the next few days (and with 2 different kinds of chicken, it doesn't have to be the same thing each night). We'll probably have one no-real-dinner night of cereal or whatever, and that will get us through Thursday.
Then take-out on Friday.
