I don't have a real recipe... I just scramble some hamburger with some diced onions, toss in some corn niblets, put them in the bottom of a 9x13 pan... then I put mashed potatoes on top (mashed with butter and a little milk)... I sprinkle some paprika over the potatoes then bake at 350 until the potatoes start getting golden brown. You can also add peas or other veggies in with the scrambled hamburger and corn, but DH doesn't like peas so I usually leave them out.
I've heard some people add creamed corn in between the hamburger and potato layers, but I have never tried it myself.
This is the last one I made, about two weeks ago. Easy and yummy. I used ground turkey instead of lamb; ground beef would work fine too. I also added shredded cheddar to the potatoes and sprinkled some on top. Mmm...cheeeeeese.

MEXICAN corn - 2 cans
instant mashed potatos usally homestyle butter
cover with tinfoil cook 350 20 minutes
take off foil add MEXICAN cheese bake 10 more minute
yummy the mexican corn and cheese give it a nice little kick
I scramble hamburg and layer that on the bottom.
Put a layer of shredded white cheddar or mozzerella cheese on top of the hamburg
I add sweet canned peas and a can of corn on the next for the next layer
I put my own mashed potatoes for the last layer (mashed with garlic powder, whole milk, butter, parmasean cheese, pepper) on top and then I sprinkle the rest of the bag of shredded mozzerella or cheddar cheese and also sprinkle with bread crumbs.
Bake at 350 for 25 min! YUM!
I make it on the fly.
Brown some beef (or turkey) (at least one pound for a small square dish, maybe 2 lbs. for a larger dish) in a skillet. Drain.
Put beef in bottom of baking dish. Add can of beef or turkey gravy. Mix in veggies such as corn, peas, carrots, whatever you like. You can do canned (drained), frozen, fresh, whatever. Season however you wish with salt, pepper, etc. I mix the meat, veggies, and corn together but you could just keep it layered if you want.
Top with mashed potatoes. I prefer fresh mashed, but I'll do instant when I'm lazy or in a rush. You'll need two batches of fake spuds for sure for a larger dish, you can just get away with one batch of fake spuds for a smaller dish.
Put a few pats of butter on top of the potatoes, and bake on 350 or so for maybe 30 minutes, just until the top peaks of the spuds start to get toasted looking.
