It will only let me edit my extra posts.
I don't have a very inspiring menu this week...but tonight we are having vegetable beef soup (I got a packet mix today where you just add water and tomato sauce) with grilled cheese sandwiches.
Also, this week we are having tacos made with ground turkey and then something with chicken breasts, but I'm not sure what yet...I know, exciting, huh?!
Tonight - homemade 4 cheese lasagna w/ side salad
tomorrow - probably leftovers
Wednesday - pork chops w/ bbq sauce and baked potato
Thursday - pot roast, rice a roni, and biscuits
Friday - I may try my hand at homemade chicken parm or opt for cheesy chicken
Blog!
How do you make this? It sounds yummy!
2 (pre cooked amount) cups cooked rice
1 can cream of chicken soup
16 oz sour cream
8 oz shredded cheese
2 or 3 chicken breasts, cooked then cubed
diced jalapenos to taste
Sleeve or so of ritz or townhouse crackers
Mix everything but the crackers in a large bowl. Spread in 9x13 casserole dish. Top with crushed crackers. Bake 25-30 minutes or until bubbly.
DH likes his really spicy, so I usually add some extra jalapenos to the top of one side before I add the cracker layer. It's not health food by any means, but it is good comfort food.
I made chili yesterday so we had leftovers tonight
Other items on our list - tortilla soup, lemon chicken, indian chicken, pork stirfry, pork chops w/ potato balls and gravy
Last night, we had tacos... I like to add refried black beans (Amy's brand, maybe?)
Tonight we're having chili (DH making that one)
Not sure about the rest of the week, but these are things we've been having lately. We don't really have big dinners with lots of sides... I guess we have bigger lunches most of the time.
Homemade pizza - we buy the dough from Publix and use our own sauce and toppings
Butternut squash soup - soooo easy and good
Risotto - I also use butternut squash in this
Crab legs or shrimp, steamed
Tonight: I have a banquet to go to with DH..so whatever they are serving!
Wed: Beef Stroganoff with green beans and corn on the cob
Thurs: Cornflake crusted pork chops with mashed potatoes and green peas
Fri: Homemade pizza
Sat: Maybe out to eat?
Sun: Smoked sausage with grilled sour kraut and some vegetables
