Has anyone ever cooked Mahi Mahi at home? I bought some filets at publix and am thinking of baking them tonight but they are thicker than fish I am normally used to making.
Any suggestions on baking the Mahi?

Well I usually do this for grouper, but I think it should work. I get the fish marinade it in a little evoo, worshestire (sp?), salt/pepper, gree/red peppers, and some onions. Let marinade for 30-45 minutes. Remove fish and bake/grill. Get marinade place in sauce pan. Stir in medium heat until onion is soft and translucent, then add a can of coconut milk. Cook down until reduced and serve immediately over fish. Will look like this
