If you have the $ to splurge, I agree, you MUST stay at the Hotel Del Coronado! It is the most gorgeous place, ever. DH surprised me for a weekend there when we were dating (sigh, the things men do before you get married...) If you love historic buildings, you could spend about three hours just looking at the details in the lobby.
Coronado is nice to just drive around, too. The homes are fab, lots of historic ones, and cute little cafes, the beach...
If you are looking to enjoy Hotel Del but don't want to fork over the cash, I recommend the Sundeck Bar & Grill for lunch (as long as the weather is good). It's located on the beach side just across from the creamery. You order at the hut and then find a table, enjoy the sun, some drinks, and good food. If you want to peddle around town, I believe you can rent bikes and such to go exploring the island. Lastly, there are miles and miles of nice beach.
P.S. You can usually park for free in the neighborhoods just up the beach from the Del.
