we're hosting a tastefully simple party this weekend (ever been to one? its like pampered chef/tupperware/ect but they are trying to sell food items like bread, dips, and desserts). The party involves sampling although no one's going to get stuffed from it, and i expect people to hang out after for a while although i'm not sure how many or for how long (party begins at 4pm).
I'm planning on serving some "spring time" cocktails like strawberry champagne punch and berry daiquiries (sp?) but am kinda stuck on the food - if people hang out after, it'll be dinner time, but it'll be tough to plan dinner for an unknown number of people....maybe stick with heavy apps?
what would you serve? any recipes for me?

I've been to one! They have a GREAT beer bread batter.
Food, is it possible you could send out a quick e-vite to see who'd be staying after. If not, I don't think it'd be a big deal.
You could make 'heavier' appitizers. Mini Burgers, Pigs n Blanket, Stuffed Mushrooms, Jalpeno Poppers, Stuffed Jalepeno's. That sort of thing.
Also you could always when the party starts casually ask about who's staying, or what not and put in a quick pizza order for later that night.
I love ts parties!! I love the key lime pie and I don't even like pie.. oh and the wild soup ahhh..can I come..lol..
When my friends and I do it we usually are ok from the sampling it all really depends on how many people are attending. After we sample we do sit around for a little while drinking beer and cocktails and maybe a very light app. I think what your plans are great. Have fun..
I would stick with apps too. Much easier, imho.
Try a platter with different artisan cheeses, meats, breads, nuts and honey. Bruschetta is easy to prepare ahead of time, just add it to the bread at the last second. You can also do a chicken satay. Again, really easy to prepare and no utensils needed. Anything phyllo wrapped will work too, spanikopita etc. A baguette with spinach and artichoke dip is filling and easy too.
