I am not a fan of meatloaf but DH is and I promised I would make this before it got to hot out to bake

  • I do an italian meatloaf - you might like that - it just tastes like a big meatball. lol

    for the two of you -

    1 lb of either meatloaf mix (1/3 veal, 1/3 pork, 1/3 beef) or just ground beef (dont' use turkey with this - I have a turkey recipe, but this isn't it) 

    1 x-large egg  (2 small eggs)

    3 slices of white bread (I love arnold's country white)

    1 clove of garlic minced

    1 handful of fresh parsley chopped fine

    a handful and a half of locatelli grated cheese

    1 can of stewed tomatoes

    Preheat oven to 375

    Combine all the ingredients except the tomatoes in a large bowl.  With the bread, run the slices quickly under running water and then break up into the bowl.  Mix all the ingredients with your hands - but DO NOT OVER MIX.  Form the mixture into a loaf on a cookie sheet (NOT IN A LOAF PAN) that is lined with tin foil and sprayed with pam.  Put it into the oven at 375 for 20 minutes.  After 20 minutes, pour the can of stewed tomatoes over the meatloaf and put it all back in the oven for a half hour and crank the temp up to 400. 

    You will LOVE this.  It's a classic Italian meatloaf.  I always make this with mashed potatoes and spinach.  Enjoy!
  • I forgot!  before you mix the mixture!  Season with salt, pepper and garlic powder!  Sorry!
  • This is DH's favorite that I make him....I also put in a bit of ranch dressing and glaze the top with it or ketchup - yum!

    It's not too ranch-y either, but adds a good flavoring.

  • This is the one I like to make.  I wasn't much of a metloaf fan either until I found ths recipe.  It's  Barefoot Contessa.  I usually cut it in half.

    Turkey Meatloaf 
    3 cups chopped yellow onions (2 large onions)
    2 tablespoons good olive oil
    2 teaspoons kosher salt
    1 teaspoon freshly ground black pepper
    1 teaspoon fresh thyme leaves (1/2 teaspoon dried)
    1/3 cup Worcestershire sauce
    3/4 cup chicken stock
    1 1/2 teaspoons tomato paste
    5 pounds ground turkey breast
    1 1/2 cups plain dry bread crumbs
    3 extra-large eggs, beaten
    3/4 cup ketchup

    Preheat oven to 325 degrees F. In a medium saute pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme until translucent, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temperature. Combine the ground turkey, bread crumbs, eggs, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. Spread the ketchup evenly on top. Bake for 1 1/2 hours until the internal temperature is 160 degrees F. and the meatloaf is cooked through. (A pan of hot water in the oven under the meatloaf will keep the top from cracking.) Serve hot, at room temperature, or cold in a sandwich.
  • I made a variation of Giada's Stuffed Meatloaf. It's a basic Meatloaf recipe stuffed with chestnut and pancetta stuffing. I made a plain Stovetop Stuffing, threw in bacon (to replace the pancetta), and stuffed the meatloaf with that. Came out pretty good.

  • This is the recipe I use. I don't remember where I found it, so I'm not giving someone who deserves it credit, but it's very yummy.

    Meatloaf

    1 1/2 pounds lean ground beef
    1/2 cup crushed buttery round crackers
    3/4 cup shredded Cheddar cheese
    1 (1 ounce) package dry onion soup mix
    2 eggs, beaten
    1/4 cup ketchup
    2 tablespoons steak sauce

    DIRECTIONS:
    Preheat oven to 350 degrees F (175 degrees C).
    In a large bowl, stir together ground beef, crushed crackers, cheddar cheese and onion soup mix until well combined. In a separate bowl, stir together eggs, ketchup and steak sauce until smooth. Stir the egg mixture into the beef mixture, adding a little water if necessary. Shape into a loaf and place in a 9x5 inch loaf pan.
    Bake in preheated oven 45 to 60 minutes, until no longer pink.
