What do you cook for dinner?

I am getting bored of cooking the same things for dinner week after week.  What are some meals you keep in the routine?
With the spring here and summer coming, I want to start planning out our meals a week or at least few days in advance.  I dont get home from work until after 7 and if I dont know ahead of time what we are going to have, we normally will just have somehting light.

  • I dont have too many things I make all the time (umm... mexican, a few fav fish recipes, burgers, steaks those are regulars)

    I try to map out protein first - chicken, fish/shrimp, pork, beef first and then pick a recipe for each - often new ones, or whatever we have on hand to use up. Planning for the week makes it WAY easier IMO

  • Some of our regulars:

    chicken cutlets and pasta

    turkey kielbasa, carrots, brussel sprouts and bowtie pasta (all boiled)

    veggie scramble and egg bagels

    pork chops various ways with rice and a veggie

    grilled tilapia with a starch and veggie

    american chop suey with zucchini

    this chicken/rice a roni broccoli mix that DH cooks all in one pan

    ham, cheese and apple paninis, sometimes with soup

     

  • Center-cut pork chops have become one of our favorites, and they're often on sale at Big Y.  We just put a pork rub on them and grill, and we heat up some BBQ sauce on the side.  For sides, we typically do roasted potatoes or rice for a starch and asparagus or yellow squash/zucchini (also done on the grill) or steamed broccoli.

    Other meals we make often:  burritos or quesadillas; grilled chicken breasts sliced on salads with lots of yummy extras (craisins, gorgonzola cheese, slivered almonds, avocado); shrimp and scallops sauteed with either olive oil and garlic or lemon pepper, served with rice pilaf and veggie; sometimes we just do big baked potatoes with broccoli and cheese; BLTs are an easy meal when we don't have a lot of time.

    I should add that DH does most of the cooking, esp. since Elizabeth came along...I'm typically getting her ready for bed/feeding her while he prepares dinner.
  • Oh, we do a lot of salmon, too, often with just a salmon seasoning on it (I think it's made by Paul Prudhomme) or just lemon juice and white wine.
  • I plan like PGH does...figure out the meats/proteins for the week and go from there with sides.  We eat a lot more red meat than we should right now, but I'm still having really bad white meat aversions, so I'm hoping to go back to chicken and pork after the baby comes.  I usually try to do one "complete" meal/week...something like Sheperd's Pie, a pasta of some sort, or casserole or something like that.  I'm doing stuffed peppers tomorrow!
