I'm making a ricotta & spinach stuffed chicken for dinner and am at a loss for side dishes. Any ideas?

roasted potatoes...and heres my yummy recipe for them...
walsh and cut up. sprinkle a bit of olive oil on them and some garlic powder, salt and pepper, and some parsley flakes. toss and bake then broil for a few to make a tad crispy.....
soooooooooo good...
FWIW: after reading my post, that sounds like your average way to make them. Oh well. LOL
