Caramel cake recipe?

I am in search of a caramel cake recipe to make for my mom's bday... cant seem to find a strong candidate on any of the food websites I hit...

anyone here know of one?

  • Wierd. I actually just saw this last weekend and thought how amazingly gooey and rich it must be. It's a chocolate pund cake recipe along with an Irish Cream caramel topping. Take a look:

  • I've made this one twice already and it's pretty darn good!

    DOUBLE CARAMEL CAKE  

    1/3 c. granulated sugar
    1/4 c. boiling water
    3/4 c. butter
    1 1/4 c. sugar
    3 eggs, unbeaten
    3 c. sifted cake flour
    3 1/2 tsp. baking powder
    1 tsp. salt
    1 c. milk
    1 tsp. vanilla

    Melt the 1/3 cup sugar in heavy skillet, stirring constantly until deep brown syrup is formed (caramelized). Remove from heat and slowly stir in boiling water. Set syrup aside to cool. Cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.

    Stir in 4 tablespoons cooled syrup. Sift together dry ingredients and add alternately with combined milk and vanilla, beginning and ending with dry ingredients. Beat until smooth. Pour into 2 (9 inch) layer pans lined with greased and floured brown paper.

    Bake at 375 degrees for 25 minutes. Let stand in pans a few minutes, then remove to turn out. Peel off paper and cool on racks. Frost when cool.

    CARAMEL FROSTING:

    3 c. brown sugar, firmly packed
    1 c. and 2 tbsp. light cream or half and half
    1/2 stick butter
    1 tsp. vanilla

    Mix sugar and cream and cook over low heat to soft-ball stage (235 degrees on candy thermometer). Remove from heat, add butter and cool. Add vanilla and beat until frosting is spreading consistency. A little cream may be added if frosting becomes too thick. Spread between layers, on top and sides of cake.
  • mmm I love peabody's blog too :) That is where I got a abana cake recpe from! sadly though Im looking for the opposite... caramel cake and chocolate frosting (I have the frosting recipe already). I may end up having to experiment on this one... backup plan is just to make a sponge cake and let caramel sauce soak into it...

  • Once I've even used the above cake recipe as the "cake" in the recipe below and it was fabulous.  You may or may not need the carmel frosting above - but I like carmel and I love sweet - so I even made the frosting. 

    My mouth is watering!  YUM!!

    CARAMEL CAKE  

    1 (14 oz.) pkg. caramels
    1/2 c. butter
    1 (14 oz.) can sweetened condensed milk
    1 (18 oz.) pkg. chocolate cake mix
    1 c. chopped nuts

    Preheat oven to 350 degrees. In heavy sauce pan over low heat melt caramels and butter. Remove from heat, add condensed milk. Mix well.

    Prepare cake mix according to directions. Pour 2 cups batter into greased 13 x 0 pan. Bake 15 minutes. Spread caramel mixture evenly over cake. Spread remaining cake batter over caramel mixture. Top with nuts. Return to oven and bake 30-35 minutes, until cake springs back when lightly touched.
