Trick for Tilapia and Catfish
This is a trick I learned from Cooks illustrated. Tilapia and Catfish are bottom feeder fish and can have a "muddy" taste from the Geosmin in the algea they feed on in the farm ponds. to combat this soak them in buttermilk for an hour - then rinse them off well, pat them dry and cook them however you please.
you can also use lemon water - but it slightly changes the texture of the fish. Anyway it works I do this regularly now
