Need Dinner Inspiration

I'm leaning towards fish, not salmon, not shellfish.  I'm thinking haddock, tilapia, some sort of whitefish.  Wow me with your recipes.

  • if you go for a beefier whitefish like bass or halibut I love a good fruit salsa with it

    Cant help with the tilapia types... not a fan so I dont make em ;)

  • Check IfIHadItAll's bio for a fab Tilapia recipe.  Super yummy.

    I bought some cod today to make tomorrow night, planning to just put it in some foil on the grill with a little butter and Panko breadcrumbs.

  • Pgh - I haven't bought the fish yet so I can be swayed to a different one, just not feeling salmon.  I know your blog can wow me, but it's blocked at work.

  • well the meatier ones tend to be a bit pricier too, but I just dont like tilapia et al. Nice meaty fish mmmm. The stuff in my blog are simple - cook the fish like you would cook salmon - simply with oil and maybe lemon or lime - on the stove. Top with fav fruit salsa (I like a strawberry one with onion, cilantro, lime or pinapple with mango, onion, lime, mint, or really whatever strikes your facy at the store!)

    the parmesan tilapia recipes out there always look good to me too though, I should re-try to like it again sometime.

  • Tilapia hands down!!!! You can do so much with it. It's cheap and 80 cal each!  I love it!!! I can't really wow you with a recipe but I have loved it coated, lemon, piccatta, parmesean, etc...
  • A few months back, OctNYCBride posted a recipe for a marinade for fish. I have done this with tilapia a couple of times, and I swear, it's the only way you'll get me to eat tilapia, which I don't normally eat - unless it's on sale. Here it is:

    Make a marinade of soy sauce, honey, little balsamic vinegar, lemon juice, and a touch of sesame oil if you have it (if not, olive oil will do), plus salt and pepper. Keep tasting the marinade to be sure you have the right mix (sorry I don't have measurements - I just eyeball everything). Marinade the fish for about a half hour and put it in the oven at 375 for 10 minutes (depending on the thickness - it tends to be pretty thick. And then turn up to broil for 4-5 minutes.

  • Corvina - it's a meaty white fish. I've never bought it at the store but I've had it twice at restaurants and I loooove it. I would do it like PGH said with a fruit salso or with just butter and breadcrumbs. It's delish!
