meatloaf recipe

Does anyone have a meatloaf recipe that isn't too involved?  I am looking for something easy.

  • I have two.  My basic is just 1 egg, some bread crumbs, an envelope of onion soup mix with some meat. 

    the other I need to go look up...it's more of a Mexican meatloaf....

  • 1 pkg. Meatloaf mix (usually available in the meat case, if not, ask the butcher)

    Worsteshire Sauce (sp?)

    Ketchup

    1 Egg

    Bread Crumbs (pre-packaged or broken up pieces of bread)

    Preheat the oven to 350 degrees.  Mix everything together by hand in a large bowl.  Shape into a loaf and place in a 13x9 brownie pan.  Bake for about 45 minutes, until the inside is cooked through but it is still juicy.

    I usually serve this with ketchup and a heaping pile of mashed potatoes.

  • Oh, and put in a loaf pan and bake at 375 for about an hour (until it's done).

    Here's a different one (but I subbed tortilla chips instead of saltines):

    INGREDIENTS

    • 1 pound ground beef
    • 1 1/2 cups medium salsa
    • 1/4 cup grated Parmesan cheese
    • 1/4 cup shredded Monterey Jack cheese
    • 1 egg
    • 1 cup crushed saltine crackers

    DIRECTIONS

    1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
    2. In a large bowl, mix together ground beef, salsa, cheese, egg, and cracker crumbs. Form into a loaf, and place in prepared pan.
    3. Bake for approximately 1 hour, or until done. Internal temperature should measure at least 160 degrees F (70 degrees C), the meat should be browned through, and the juices clear.
  • It might be a little more work than you are wanting to do, but you should atleast check this one out.  It's a keeper!!!  I usually make it with ground turkey to keep it a bit healthier.  Since turkey doesn't have as much flavor as beef, I add a little bit extra on the spices.

  • OK, here's one more--hope you're not feeling overwhelmed!  This is seriously GREAT meatloaf.

    1.5 lbs groud meat

    one onion chopped

    one pepper (red, green, whatever you have) chopped)

    1 can mushrooms (optional)

    handful oatmeal or breadcrumbs

    1 egg (binds it)

    mix all together in bowl. Put in glass baking dish & form loaf shape.

    Mix together 1/2 ketchup, 1/2 barbecue sauce. Make tunnel down center of loaf & pour in sauce. (I like a LOT and like to get it to cover the loaf. Usually takes 1-2 cups of sauce mix)

    Bake @ 350 for 1 hour.

  • It's probably involved but I know the Cap City Meatloaf recipe is on Cameron Mitchell's website.  I love their meatloaf!
  • Hold the presses!

    This recipe is Paula Deen's Basic Meatloaf and it is THE BEST you will ever have.  Trust me, I've made many different recipes and will never make any other than this one again!

    1 pound ground beef
    1 1/4 teaspoons salt
    1/4 teaspoon ground black pepper
    1/2 cup chopped onion
    1/2 cup chopped bell pepper
    1 egg, lightly beaten
    8 ounces canned diced tomatoes with juice
    1/2 cup quick-cooking oats

    Topping:
    1/3 cup ketchup
    2 tablespoons brown sugar
    1 tablespoon prepared mustard

    Preheat oven to 375 degrees F.

    Mix all meatloaf ingredients well and place in a baking dish. Shape into a loaf.

    Topping:
    Mix ingredients for topping and spread on loaf. Bake for 1 hour.

  • I do the same as Buckeyechik, but I add wochester (sp is bad, sorry) sauce to taste.  I love it. :)  My dad made one w/ french fries vs. breadcrumbs.

  • My little trick is stolen from Rachael Ray.  Boy is she annoying, and usually she burns her meat, but this is actually a good idea.

    She puts meat loaf into a muffin pan.  That way they're individually portioned and everyone gets the good outside part.  Scott and I call them meat muffins and laugh because it sounds dirty.
