Easter

Hey ladies - what does everyone have for Easter dinner?  I want to steal some ideas :)

  • We are doing: Ham, Cheesy Potatoes, Salad, Rolls, and a banana pudding dessert I got on allrecipes.com.  It's only 4 of us this year so we aren't going all out.  I am making homemade cinnamon rolls on Sat. for Easter morning.
  • Megan - would you want to share your recipes for Cheesy Potatoes and Cinnamon Rolls??  :)   Sounds very tasty!!!

  • my most favorite Easter side dish is

    pineapple casserole.  It's just canned pineapple, sugar and bread baked together in the oven.  It may not sound amazing, but I swear it is!!  I thought my mom was the only one who made it, but my SIL made it last Christmas.  Yum!!!

  • Emily - I just made that pineapple casserole for the first time this week. You're right - it's amazing! So easy to make too. DH loved it and is already asking for it again. I never thought to make it for Easter, good idea.

    We are having cheesy potatoes, ham, family baked beans, and hopefully cheesecake. only a few of us, so why go all out? its about being together, not what we eat anyway..but the food is an added bonus!

  • I don't have my recipe with me but this looks just about right...

    INGREDIENTS

    • 1/2 cup margarine
    • 1 cup white sugar
    • 4 eggs
    • 1 pinch ground cinnamon (optional)
    • 1 pinch ground nutmeg (optional)
    • 5 slices white bread, torn
    • 1 (20 ounce) can crushed pineapple with juice

    DIRECTIONS

    1. Preheat oven to 350 degrees F (175 degrees C). Grease a medium-sized casserole dish.
    2. In a mixing bowl, cream together margarine with sugar. Beat in eggs one at a time. Stir in cinnamon and nutmeg. Stir bread and crushed pineapple into the mixture. Transfer mixture to the prepared baking dish.
    3. Bake 60 minutes in the preheated oven, or until bubbly and lightly browned.
  • We are going to be getting a Honey Baked Ham, mashed potatos, broccoli cheese cassaroll, & some type of veggies. 
  • Sorry dudes!  i left the pineapple caserole @ home.  I will get it tonight.
