Sorry, not much help, Steph...that's my go-to...
My go to recipe is for potato skins. Bake a couple of potatoes for an hour. Quarter them, scoop out the majority of the inside top with cheese and bacon, bake until melted. yummy.
Sliced Cheest, Sliced Salami, and triscuits. Yum.
Bruchetta: Slice a baguette, mix together diced tomat., diced onions, parmesian cheese, and a little Italian salad dressing. Place mixture on baguette slices, put a little more cheese on top, the toast. It takes me about 25 min to do the whole thing if I toast on a large sheets in the oven.
Usually I do teeny sandwiches. I just get a long skinny loaf of bread, cut it up and add stuff to it. PB&J, turkey, egg salad or some other thing.
Egg Salad: 4 eggs, some mayo & mustard, 3 slices of fried bacon (optional), salt, pepper & a pinch of cayenne pepper.
4 layers appx
1) refried beans - spread them in pan
2) mix taco seasoing packet with sourcream - spread in pan over beans
3) Salsa - pour over sourcream
4) shredded cheese - sprinkle over salsa
you can add stuff to it if other stuff sounds good to you it takes a short period of time and is pretty tasty!
serve chilled with chips!
When I'm short on time, my go-to appetizers are hummus with pita chips, bruschetta (I buy these Pannetini bread things at Costco that are great for bruschetta), or pigs in blanket -- little smokies wrapped in cresent rolls and baked. Everybody loves 'em!
1brick of cream cheese
1can of hormel chilli (no beans)
1can of chopped green chilis
1/2 a jar of your favorite salsa
grated cheddar cheese.
In a baking dish spread cream cheese on the bottom. Mix together chilli, green chilis, and salsa. Pour over cream cheese. Cover dip with grated cheddar cheese and bake at 350 for about 25 minutes or until cheese is nice and bubbly. Serve with tortilla chips. YUM!
