Any good chicken recipes?
Hi ladies! I know it's been awhile since I have posted (being back at work has been a very tough adjustment for me).....but I was hoping I could get some recipe advice. I am looking for a new recipe to use with chicken breasts......so if you know of something good that you like to cook, can you please share it with me? TIA! - Emily

I think I got it from someone on this board. It's quick and easy and really, really good. The recipe says chicken thighs, but we use breasts and it turns out great. If you're not into all the spices, just the honey/vinegar mix is awesome on it.
We just made this yesterday it is really great and pretty quick.
Grilled Chicken Penne Pasta
1 large sweet pepper (any color) (chopped)
1 medium vadalia onion chopped)
1 package sliced portabella mushrooms
2 Cans (15oz) fire roasted tomatoes
1 bag spinach
1/2 box Whole Grain Penne Pasta
2 Whole boneless/skinless Chicken Breasts
Sautee the onion, pepper and mushrooms in a large skillet until soft. Add the two cans of tomatos and simmer.
Cook the pasta in boiling water according to package directions in a separate pot.
In the mean time grill chicken on grill, we marinade it first in our favorite marinade.
Add cooked, drained pasta to vegetables stir to combine. Add spinach to skillet add lid to wilt spinach. Once the spinach is wilted, stir to combine and place in a serving dish.
Slice chicken breasts and add to the top of the pasta/vegetable mixture.
Remember to season your veggies and pasta before cooking

I also like to just put creamy french dressing on my chicken when I am baking it or grilling it (I only make chicken breast so it is on this). It is REALLY good. Put it on like you would put on BBQ sauce.
And I also love to make a variation of Rachel Ray's 30 minute "honey roasted peanut chicken". Look it up... I have to leave soon so I don't have time to look up the recipe. The part I cut out is frying it before baking it. I just bake it. It is VERY good.
And I like to make chicken casserole with egg noodles, cream of mushroom soup, and chiken mixed together.
I will sometimes buy a whole roaster chicken, season with Mrs Dash and bake it with carrots and potatoes. 350 degrees for an hour to 2 hours, depending on the size of the chicken. I just use a covered Roast Pan and put about an inch or 2 of water in it, so the chicken and veggies stay moist as they cook. You can eat the cooked carrots and potatos with the chicken the 1st night. I usually have enough chicken left over to make chicken salad the next day for work.
