Heya - I meant to ask - if you get a chance, would you mind posting your yummy pot pie recipe from Book Club?? It totally satisfied my comfort food craving and I'd love to recreate it!!

  • Glad you liked it. I'm a big fan of comfort food. I pretty much tend to use what I have on hand for these things, (aka: make stuff up with some leftovers) so they can vary to your tastes. :) Like sometimes I add stuffing. Whatever you like. The chicken can be roasted chicken or you can just use chicken breast and cook those up.

    Erin's Chicken Potpie at Steph's bookclub

    About 2 cups cut-up cooked chicken
    Heinz jar of chicken gravy
    1 small zucchini
    3-4 small potatoes ~ Peel, (slice or cube) potatoes, boil them for a little bit , (like for mashed potatoes) but don't let them get mushy. Drain.
    1/4 c. chopped onion
    About a cup of various shredded cheese and/or Velvetta
    Bisquick (butter & milk)
    salt/pepper/McCormick's chicken seasoning

    Layer chicken on bottom of glass dish
    Pour gravy on top
    Slice up zucchini, layer over gravy
    Mix potatoes, onion, salt, pepper, butter (I also use a dash of McCormick's Rotisserie Chicken seasoning, but you don't have to.) I have this on hand and use it to flavor steaks, chicken , pork chops, whatever. Very handy. :)
    Add cheese (I used some cheddar, pepper jack & velvetta)
    Layer potato/onion/cheese mix over the zucchini
    Mix up Bisquick (use drop biscuit recipe on box) I also add several small chunks of butter to this.
    Layer over potatoes.
    Bake on 400 about 30-40 minutes (you want the crust to be nice golden brown and the cheese bubbling through.)
